Abalone Fried Rice

….Why was my heart pounding and anticipating so much? I was anxious trying to use abalone guts for the first time. Frankly, I kept doubting this would taste good. This recipe is from @floretique5. She recommended that fresh abalone doesn’t have any fishy smell and to season them with fish sauce and tuna sauce. Also it’s good to use perilla oil and sesame oil as well. The ingredients were very simple and easy to make. I tried step by step from scratch. Finally, It’s time to try the taste of abalone fried rice, and I gave some to my husband…..hahaha. I asked him “how does it taste?” He said “WOW it’s nutty!! He asked me again and again “What is it?” I laughed, and then I tried the abalone fried rice. It’s nutty and was so comforting. My husband and I scraped the bottom of the pan and ate it all. I’m so thankful to have tried using an ingredient I’ve been avoiding and for it to have given me such a fresh taste. Thank you @floretique5. Prejudice has made me hesitate for a very long time.

Servings: 2–3

Time: 30 minutes

Ingredients:

  1. 4–5 abalones, removed shells and cleaned(guts reserved)
  2. 3 cups steamed rice
  3. 2 tbsp sake
  4. 2 tbsp anchovy broth(this is optional)
  5. 1 tbsp fish sauce
  6. 1 tbsp tuna sauce
  7. 2 tbsp perilla oil
  8. 1 tbsp sesame oil

Cooking Instructions:

  1. Slice the abalone into one bite size and set aside(intestine reserved).

2. Put the reserved guts with a strainer and then cut them with a scissors into small pieces.

3. Add the sake into the guts and scrape it off with a spoon in to a small bowl(I add some anchovy broth for helping to scrape).

4. Heat a pan with medium high heat and add 1 tbsp perilla oil and sliced abalone into the pan to stir them 1 minute quickly. Place them on a tray.

5. Add 1 tbsp perilla oil into the same pan and pour the scraped guts and fish sauce into the pan to stir it for 30 seconds.

6. Turn down to medium heat and add the steamed rice into the pan to stir them for 1–2 minutes.

7. Add the cooked abalone and tuna sauce into the pan to stir them for 1–2 minutes.

8. Turn off the heat and sprinkle the sesame oil into the pan.

9. Place it with braised dried anchovy and fried egg on top.

10. Serve it.
