Agedashi Tofu

….Agedashi tofu is soft tofu coated with potato starch and deep-fried so that the outer shell is crispy. It’s typically served with grated radish, grated ginger, katsuobushi, and chive on top. Then tsuyu is poured over the toppings and soaks the tofu to enhance its flavor. I already made @comble2’s tsuyu that tasted fantastic. So I only added it. If you have the tsuyu, it makes this a piece of cake. This tsuyu is a must-have ingredient in my refrigerator. This unique appetizer is crispy on the outside and creamy and soft inside. Soaked in the savory tsuyu, the combination tastes amazing. It’s actually not difficult to make if you don’t mind deep frying. Sometimes it’s hard to believe a delicious dish like this is easy and simple to make at home yourself. I recommend this tsuyu is super delicious, and here are some tips on how to make it elegant. My family loves tofu dishes but my husband especially is crazy about agedashi tofu. He ate three pieces of tofu today. He has been speaking highly of this tsuyu taste being luxurious.

Servings: 2–3

Time: 20 minutes plus 5 hours pressing tofu to remove moisture

Ingredients:

  1. 1 tofu, removed moistures
  2. 100 ml comble’s tsuyu
  3. 100 g radish, grated
  4. 2 tbsp potato starch
  5. canola oil to fry
  6. katsuobushi for garnish
  7. green onion for garnish(this is optional)
  8. chives for garnish

Cooking Instructions:

  1. Put water into a container and the container on top of the tofu for 5 hours into a refrigerator(press the tofu to remove some moisture).

2. Grate the radish with a grater and wash with running water and a strainer(removes some spicy taste of the radish). Set aside.

3. After 5 hours, cut the tofu into 4 pieces and coat the potato starch well.

4. Heat a pan with medium high heat and add the canola oil into the pan. Heat the oil to 350 F(when you put wooden chopstick in the oil, there should be bubbles around the chopstick). Place several layers of paper towels on a sheet pan. Put the tofu into the pan to fry them until light brown.

5. Place them onto the sheet pan(remove some oil).

6. Serve it with garnish and pour the tsuyu(I just used the tsuyu only, but you can mix some water into the tsuyu).
