Amber Jack Carpaccio
….24 years ago, I learned to cook for the first time from a chef. This recipe was the first recipe. I still remember how good these times were that I spent with my friend . I am happy again these days learning and recording something precious to me. My recipe book has helped me a lot in my life with my family. If my memory serves me right, when my daughters were children I didn’t use raw fish very often. Even looking at the ingredients I couldn’t imagine the taste — mayonnaise, chili bean sauce, lemon, garlic, balsamic, and olive oil…. What does it taste like? I tried to find that taste. There are several steps in the process to cook, but not difficult. I think this recipe added some chili bean sauce for reducing the greasy taste of raw fish. Although it is a unique ingredient, it does not affect the taste much and helps the flavor. I tried to slice the raw fish as thinly as possible. I was reminded of this dish again but the plating this time was not satisfactory. Carpaccio is a dish of beef or fish thinly sliced and raw, typically served as an appetizer.

Time: 1 hour
Ingredients:
- 300 g amber jack fillets, sliced thinly
- 2 tbsp mayonnaise
- 1/2 tbsp chili bean sauce, sifted with strainer(use only liquid)
- 1 tsp fresh lemon juice
- 2 tomatoes, peeled and diced
- 1 cucumber, removed seed and chopped
- radish sprouts to taste
For dressing:
- 1 tsp garlic, minced
- 3 tbsp extra virgin olive oil
- 2 tsp balsamic vinegar
- sea salt to taste
- black pepper to taste
….all mixed
Cooking Instructions:
- Mix the mayonnaise, chili bean sauce(sift), and fresh lemon juice into a bowl well. Set aside.
2. Pat dry the fish and slice thinly. Place them onto a tray(spread out).
3. Marinate the fish with the mixed mayonnaise sauce(only one side). Store it into a refrigerator for 30 minutes.
4. Meanwhile, mix the garlic, balsamic sauce, olive oil, sea salt, and black pepper into a bowl well. Set aside.
5. Cut the tomatoes crosswise very thinly with a knife on top and put them into a bowl. Meanwhile, boil some water with an electric water kettle.
6. Pour the hot water into the bowl until the tomatoes are submerged for 1 minute. You can see the tomatoes starting to peel. Now, peel the tomatoes.
7. Slice the tomatoes, radish sprouts, and cucumber onto a tray.
8. After 30 minutes, place the marinated fish onto a serving plate and sprinkle the tomatoes, cucumber, and some radish sprouts onto the serving plate. Drizzle the dressing on top of the carpaccio and serve the carpaccio as an appetizer.
