Amber Jack en Papillote(Amber Jack in Parchment)
….Amber Jack cooked en papillote means wrapped in a packet of parchment paper(or foil). It’s a dramatic way to procure perfectly cooked amber jack, but it isn’t difficult. Fold a fillet into a piece of parchment paper, and then layer it with seasonings or vegetables. Then simply bake the packets until done. The steam created by the parchment paper produces reliably moist amber jack, and opening the individual packets at the table makes for a fun way to start dinner. This recipe is known as a French home-cooked meal. It was interesting to make a simple and different recipe without using a steamer. You can cook this way with chicken and seafood as well.

Ingredients:
- 3 pieces of amber jack, fillet
- 2 fresh lime, lime zest
- 1/2 red onion, sliced
- 1 red pepper, sliced
- 1 ginger, julienned
- 4 garlic, sliced
- 3 fresh peas
- 2-3 bok choy, cut into half(or whole)
- olive oil to taste
- salt to taste
- black pepper to taste
Cooking Instructions:
- Mix the lime zest, lime juice, red onion, garlic, red pepper, and ginger into a bowl well. Set aside.
2. Cut parchment paper into a large piece. Fold the parchment paper in half lengthwise.
3. Put the amber jack on one half of the parchment paper fold. Add the olive oil, salt, and black pepper into the amber jack.
4. Add the bok choy and green peas on the side of the amber jack and drizzle some olive oil on the bok choy and green peas.
5. Add the mixed garnishes onto the top of the amber jack.
6. Fold the parchment paper in a tight pleated pattern. Twist off the end to seal the parchment paper.
7. Preheat the oven to 450F. Cook in a preheated oven about 10–12 minutes.
8. Take out the papillote from the oven(when the package is puffed up and golden browning slightly).
9. Serve it with the parchment paper(opening the individual packets at the table makes for a fun way).
