Baked Beef Curry with Mozzarella
….I learned this recipe from my cooking class 20 years ago. It’s a great combination with beef, onion, mushrooms, curry sauce, and mozzarella cheese for my daughters when they were young. It’s a recipe I’ve done countless times for my family. This dish is enough for one meal with a small salad. How about now? I am wondering, will my daughters still like it? Sometimes people’s taste change as they grow up. I’ve been making this dish for a long time. After making it, I wished it was delicious again today.

Time: 40 minutes
Ingredients:
- 2 cup beef sirloin, cut into one bite size
- 3 cup shiitake mushroom, sliced
- 2 cup enoki mushroom, cut into half
- 1 cup onion, sliced
- 1.5 cup chicken broth
- 1 Ts honey
- 2 Ts butter
- 2 stick of curry paste(small size or 1 big size)
- 1 cup mozzarella cheese
- sea salt to taste
Cooking Instructions:
- Heat a pan with medium high heat and add 1 Ts butter into the pan.
2. Add the shiitake mushroom, enoki mushroom, and onion to stir them for 1–2 minutes.
3. Add the chicken broth, curry paste, and honey into the pan to boil them for 2 minutes. Turn off the heat and pour them in a gratin pan for grilling. Set aside.
4. Heat a pan with medium high heat and add 1 Ts butter and the beef into the pan to stir them until cooked. Sprinkle some black pepper into the beef.
5. Turn off the heat and pour them into the gratin pan. Mix the stirred mushroom and the stirred beef well. Add some sea salt if it’s too bland.
6. Preheat the oven to 392F. Sprinkle the mozzarella cheese the top of the gratin pan.
7. Cook in a preheated oven about 10 minutes.
8. Serve hot with a small salad.
