Baked Broccolini

….Have you ever seen a purple broccolini? It was the first time I saw purple ones at the market. I bought 3 colors of broccolini: green, white, and purple from a farmer’s market today. How does the purple color taste? Anyway, this is an unusual way to prepare broccolini. These seasonings are minimal- just garlic, lemon, parmesan, salt, butter, and pepper for a surprisingly complex flavor from a few ingredients. This baked broccolini recipe has a special place at the table because it’s not only super easy to prepare, but it has the same superfood qualities as broccoli. This dish is a tasty dish on its own or as a side for many other dishes such as meat. I served baked broccolini with chili mac & cheese for our dinner today. We were very satisfied with both of the dishes. It can also be included in salads, pastas and I personally like to snack on it. It’s also wonderful with half a cup of finely grated parmesan sprinkled on after baking. These 3 colors of broccolini tasted very similar and lightly sweet.

Servings: 4–5

Time: 30 minutes

Ingredients:

  1. 6–7 cups broccolini, cut into florets
  2. 2 garlic cloves, sliced
  3. 2 1/2 tbsp extra virgin olive oil
  4. sea salt to taste
  5. black pepper to taste
  6. 1 tbsp lemon juice
  7. zest of half a lemon
  8. 2 tbsp parmesan cheese plus more for garnish

Cooking Instructions:

  1. Pile the broccolini onto a baking tray.

2. Sprinkle some sea salt, black pepper, garlic, and olive oil onto the broccolini. Toss them and spread out.

3. Preheat the oven to 425 F. Cook in a preheated oven about 10 minutes until edges of florets are slightly browned and crisp.

4. After 10 minutes, turn off the oven heat and remove the baking tray onto a counter.

5. Drizzle over lemon juice, zest, and parmesan cheese. Toss them and serve immediately.

6. Serve it.
