Boiled Pork, Fuyu Persimmon, Pear with Peanut Sauce

….As soon as I saw the recipe, I was curious about the taste. The selection of ingredients was ingenious and it felt like autumn. I try to put seasonal ingredients on the table as much as possible. Sweet persimmon and cool pear were enough to get rid of the greasy taste of the pork meat. It was good to put it on the table as an appetizer. Also after boiling the pork and grilling it on the pan, that removed more pork meat oil. Boiling the pork meat needs time, but the process is not difficult. The result was good, was more delicious than I thought. This recipe is from @booth108kwon.

Servings: 4–5

Time: 1 hour plus 1 hour for leaving after boiling pork meat with the lid

Ingredients:

  1. 2.2 lb(1 kg) pork belly, clean
  2. 8 cup water
  3. 1 onion
  4. 10 garlic cloves
  5. 1–2 pieces of ginger
  6. 1 ts pepper corn
  7. 2 ts Korean bean paste
  8. 1 Ts sea salt
  9. 1 Ts Mat-Gan-Jang
  10. 1 Ts Mirin
  11. 1 pear, peeled and sliced
  12. 2 Fuyu Persimmon, peeled and sliced
  13. 3 stems green onion, minced

For sauce:

  1. 1 Ts toasted sesame seeds, ground softly
  2. 1 Ts sugar
  3. 1 Ts peanut butter
  4. 1 Ts lemon juice
  5. 1 garlic clove, minced
  6. 2 Ts Mat-Gan-Jang
  7. 1 Ts vinegar
  8. 1 Ts sesame oil
  9. 1 Ts chili powder

…. all mixed

Cooking Instructions:

  1. Heat a pot with high heat and add the water into the pot.

2. Add the onion, garlic cloves, pepper corns, ginger, sea salt, and Korean bean paste into the pot to boil them with a lid.

3. Put the pork belly into the pot to boil them for 40 minutes.

4. After 40 minutes, turn off the heat and leave them for 1 hour with the lid.

5. After 1 hour, take out the pork belly onto a tray.

6. Mix the sesame seeds, sugar, peanut butter, lemon juice, garlic, Mat-Gan-Jang, vinegar, sesame oil, and chili powder into a bowl well. Set aside.

7. Heat a pan with medium heat and grill the outside of pork belly to light brown.

8. Add the Mat-Gan-Jang and Mirin into the pan to give some more brown color.

9. Slice the pork belly.

10. Place the pork belly, Fuyu Persimmon, and pear onto a serving plate.

11. Put the sauce on top of the pork belly and then sprinkle some green onion on top of the sauce.

12. Serve it.
