Boiled Pork with Shallot Salad

….This is my new recipe!!!! A clean dish of neatly boiled pork slices with shallot and lime dressing gave a fresh taste. The combination of ingredients may seem unfamiliar, but I recommend trusting and trying it. Many people think that pork, being fattier than other meats, can easily make you gain weight, but that’s not true. Pork contains unsaturated fatty acids like arachidonic acid and linoleic acid at levels 2–6 times higher than beef. Unsaturated fatty acids help prevent cholesterol from accumulating in blood vessels and promote good blood circulation.

Having a moderate amount of fat in the body helps maintain health, and the essential fatty acids in pork protect our organs. The iron in pork is highly absorbable and helps prevent iron-deficiency anemia. Boil the pork, chill it, slice it as thinly as possible, and use a torch to add a smoky flavor and heat up the meat just before serving. It tasted incredibly savory and delicious. This tip, shared by my second daughter who enjoyed this dish in Korea, made this recipe my own. Adding some shallot pickles that I recently made added a sweet and tangy fun to the dish.

Servings: 4–5

Time: 1 hour 20 minutes

Ingredients:

  1. 2.2 pounds of whole pork belly, cleaned and patted dry
  2. 2000 ml water
  3. 1 1/3 tbsp sea salt
  4. 3 tbsp Mirin
  5. 2 tbsp sake
  6. 30 g fresh ginger
  7. 10 garlic cloves
  8. 5 green onions
  9. 1 small onion
  10. 20 whole black peppercorns
  11. 200 g chives, cut into 1/2 inch
  12. 1 shallot, thinly sliced
  13. 1 lime, thinly sliced
  14. 3 -4 tbsp lime dressing
  15. some pickled shallots

Cooking Instructions:

  1. Heat a pot over medium-high heat and add the water, sea salt, mirin, sake, fresh ginger, garlic, green onion, black peppercorns, and pork belly to the pot.

2. Boil them and remove any floating bubbles with a spoon.

3. Keep boiling them with a lid for 40 minutes.

4. After 40 minutes, turn off the heat, leave the lid closed, and let it sit for 20 minutes.

5. After 20 minutes, take out the pork, wrap it tightly with plastic wrap, and shape it.

6. After it cools down, slice the pork very thinly.

7. Place the sliced shallots and chives on a serving plate.

8. Add the sliced lime and the shallot pickles on top of the shallots.

9. Put the sliced pork on top of the lime.

10. Sprinkle some black pepper on the pork.

11. Using a torch, add a slight smoky flavor to the pork.

12. Drizzle some lime dressing onto the shallots and serve them.
