Braised Beef Short Ribs with instant pot(Galbi-Jjim)

….Galbi-jjim is one of the most popular Korean dishes. My family really likes it, even eating soup of the Galbi-jjim without any other side dishes. The meat is almost falling off the rib bones and it tastes tender, sweet, and savory. A few weeks ago, my daughter ANNE gave me an instant pot as a gift to make cooking easier for me. I was a little surprised by the unexpected gift, but I was grateful. “Easy cooking!”…..Well…Frankly, the cooking time varies depending on the ingredients ?? Anyways I tried this dish with instant pot. It was difficult to integrate all the cooking processes into one. I skipped the process as much as possible and made it to instant pot. I did not get satisfactory results with one cooking, but the meat was super tender for us and vegetables melted. But the taste was not bad. I will try it next time with low pressure instead of normal….hahaha. Thank you ANNE!

Servings: 4

Time: 30 minutes plus 1 hour 35 minutes soaking with cold water for 1 hour and cooking with instant pot

Ingredients:

  1. 3 lb beef short ribs, took out fat and soaked with cold water 1 hour
  2. 3–4 Ts garlic
  3. 1 cup onion
  4. 1 cup pear
  5. 1 cup water
  6. 3 Ts Mirin
  7. 6 Ts soy sauce
  8. 1 1/2 Ts muscovado
  9. 1 1/2 Ts plum extract
  10. 1 Ts sesame oil
  11. 1 Ts toasted sesame seeds
  12. 1 carrot, cut into one bite size
  13. 10 chestnuts, peeled
  14. 15 ginkgo
  15. 1-2 Ts pine nuts
  16. some pearl onions for garnish(this is optional)

Cooking Instructions

  1. Remove the blood, excess fat and impurities by soaking with cold water for 1 hour. Heat up a big pot with high heat and pour 6 cup water into the pot to boil it and blanching the ribs for 5 minutes.

2. Turn off the heat and clean the ribs one by one. Sift the ribs.

3. Blend the garlic, onion, pear, water, plum extract, and Mirin into a bowl with a blender well.

4. Add the muscovado, soy sauce, sesame oil, sesame seeds, and black pepper powder into the bowl to mix them well. Set aside.

5. Put the blanched beef short ribs into the instant pot.

6. Pour the mixed soy sauce into the instant pot to marinate the beef short ribs for 20 minutes.

7. Add the carrots, fresh chestnuts, ginkgo, pine nuts, and green onion into the instant pot.

8. After 20 minutes, cook to choose an optional function “meat stew pressure level less”. After 35 minutes, turn off the heat and take out some oil from the pot.

9. Serve it for garnish grilled green onion(this is optional) and pearl onions.
