Broccoli Chicken Fritters

….When someone tells you to eat more greens, you probably think of broccoli. Broccoli is a popular vegetable that can be consumed both raw and cooked. Delicious cheesy fritters made with chicken and broccoli. Super tasty and kid-friendly, great for lunch or dinner too. Luckily, my grandson SIWOO loves both chicken and broccoli. So put them together in a tasty cheesy fritter and it’s a different meal. This made me think for a moment, toddlers will never eat if it doesn’t taste good…..haha. Sadly, my grandson didn’t even have a bite……Even though I made it. Broccoli has a reputation as a superfood. It’s low in calories but contains a wealth of nutrients that support many aspects of health. I just made these!! It’s so tasty, and a great way to pack vegetables and protein in tasty little crispy, cheesy bites. They are amazing for kids’ dinners and also great for adults. This recipe is from@recipe_tin.

Servings: 15–17 fritters

Time: 1 hour

Ingredients:

  1. 1 large head broccoli, cut into florets and branched
  2. 500g chicken breast, diced into 1/3 inches pieces
  3. 1/2 cup flour(any type)
  4. 1/2 cup parmesan cheese, grated
  5. 2 eggs
  6. 2 garlic cloves, minced
  7. 3/4 ts sea salt
  8. black pepper to taste
  9. avocado oil to pan fry

For pink sauce:

  1. 2/3 cup sour cream or Greek yogurt
  2. 2 Ts ketchup
  3. 1 Ts fresh lemon juice
  4. 1 ts tarragon, chopped

Cooking Instructions:

  1. Heat a pot with medium high heat and pour 4 cup water to boil.

2. Blanch the broccoli into the pot for 30 seconds and sift the broccoli with a strainer. Set aside and cool down.

3. Chop the broccoli into small size and put them into a big bowl.

4. Add the chicken, flour, parmesan cheese, garlic, sea salt, black pepper, and eggs into the bowl to mix them gently until flour is incorporated.

5. Mix the sour cream, ketchup, fresh lemon juice, and tarragon into a bowl well. Keep it in a refrigerator.

6. Heat a pan with medium heat and add enough avocado oil to cover base of the pan.

7. Put a scoop of batter onto the pan to cook them for 2 minutes until golden brown and flip them for 2 minutes. Repeat with the remaining batter and transfer to a sheet tray.

8. Serve it with the sauce.
