Chicken Cutlet Burger

….I made lunch for ANNE for the first time in awhile today. Chicken Cutlet Burger! This was a lunch box menu that ANNE liked in junior high school. I remembered that time and made it deliciously. It tastes very tender, mild, crispy and juicy. I add lots of cabbage on the top of the chicken cutlet. After ANNE ate this, she told me “It’s super yummy!”…… I got so happy.

Serving: 6

Time: 50 minutes

Ingredients:

  1. 3 chicken breast(1.5 lb, sliced into 10 pieces)
  2. 4 Ts flour
  3. 2 eggs
  4. 3 cup Panko
  5. 5 cup cabbage, sliced
  6. 6 swiss cheese slices
  7. 2 tomatoes, sliced
  8. 3 green onion, minced(this is optional)
  9. Kozlik’s triple crunch mustard to taste
  10. McCormick’s Season All
  11. Mayonnaise to taste
  12. Ketchup to taste
  13. 6 brioches(hamburger buns)
  14. canola oil to fry

Cooking Instructions:

  1. Score each chicken pieces lightly. Season the chicken with the Season All on one side.

2. Coat both sides of the chicken with flour. Dip them in the beaten eggs and press them into the Panko.

3. Slice the cabbage and soak them into cold water for 10 minutes. Drain the water and set aside.

4. Heat a pan with medium high heat and add the canola oil into the pan. Heat the oil to 350 degrees(when you put wooden chopstick in the oil, there should be bubbles around the chopstick). Place several layers of paper towels on a sheet pan.

5. Fry 4–5 pieces chicken at a time and keeping oil temperature around 325 degrees about 2–3 minutes until golden brown. Set aside.

6. Spread the mayonnaise and mustard on the bun.

7. Put the fried chicken and cheese on the top of the bun.

8. Put sliced tomato, ketchup, cabbage, and some mayonnaise on the top. Then place on the top bun. Serve it.
