….I’ve had this at restaurants and loved it. So happy to have a recipe that I can make myself. Easy homemade Chili Mac & cheese loaded with beef and beans is the ultimate casserole, ready and on the table in less than 30 minutes. This dish is a comforting, hearty meal that everyone loves. Slightly spicy, flavorful and attractive. Also it uses simple ingredients only, which you may have most of them on hand already! Even the pickiest of eaters will love this chili mac and cheese. Plus, you make it all in just one pot. What could be better? Store for up to 3 days ahead of time. Try mixing up which cheeses and seasonings you use until you find your perfect combination. I used a cheddar and mozzarella in this recipe just for the flavor and texture of those. You can use any kind of cheese you like. This recipe is from@recipe_tin.

Servings: 6–8

Time: 30 minutes

Ingredients:

  1. 1 lb ground beef
  2. 1 onion, chopped
  3. 2 garlic cloves, minced
  4. 1 tbsp olive oil
  5. 1 red bell pepper, chopped
  6. 28 oz(800 g) canned tomato, crushed
  7. 14 oz(420 g) red kidney beans, drained
  8. 2 1/2 cups chicken broth
  9. 2 cups (250 g) elbow macaroni pasta, uncooked
  10. 1 1/2–2 cups(150 g-200 g) cheddar and mozzarella, shredded cheese
  11. Parsley for garnish
  12. 1 tsp sea salt
  13. 1/2 tsp black pepper

For spices:

  1. 1 tsp cayenne pepper
  2. 1 tsp dried oregano
  3. 2 tsp paprika
  4. 2 tsp cumin powder
  5. 1 1/2 tsp onion powder

Cooking Instructions:

  1. Heat a pot with medium high heat and add the avocado oil into the pot.

2. Add the garlic and onion into the pot to stir them until onion is translucent.

3. Add the bell pepper into the pot to stir them for 1 minute.

4. Add the ground beef into the pot to break it up as you go. Keep stirring them until the beef turns from red to brown.

5. Add the chicken broth, cayenne pepper, dried oregano, paprika, cumin powder, onion powder, sea salt, black pepper, tomatoes, red kidney beans, and uncooked elbow macaroni into the pot except cheese. Heat down to medium heat and simmer them for 10 minutes(until the macaroni is al dente) with a lid.

6. Turn off the heat and add half of the cheese into the pot to stir them(it should be a bit saucy). Add some sea salt if it is too bland.

7. Add the remaining cheese on top of the pot with a lid until the cheese melts about 3–5 minutes.

8. Sprinkle with parsley and serve it immediately.
