Clam Chowder

….Soup season has come and gone, but a bowl of clam chowder can really be eaten in any kind of weather, especially when it comes to a homemade clam chowder. If you didn’t know, clam chowder is actually a very simple soup to prepare with a few pantry ingredients. This is such a simple soup but the flavors together are delicious. I love to add extra vegetables too, like cabbage and cauliflower, to give it flavor. Today I chose my favorite clams “whelk meat” with fresh clams. I recommend you give this a try. It’s a recipe that will for sure get a “WOW!” from all of your family and friends! This recipe is from chef COMBLE.

Time: 50 minutes

Ingredients:

  1. 1 cup(100 g) whelk meat(or clam), cleaned and cut into small size
  2. 1 garlic clove, crushed
  3. 1/2(150 g) onion, diced
  4. 4 Ts celery, peeled and diced
  5. 1 potato, diced and soak with cold water for 30 minutes(remove some starch)
  6. 80 g cauliflower, sliced
  7. 80 g cabbage, diced
  8. 3 white mushrooms, sliced
  9. 30 g bacon, sliced
  10. 50 ml white wine
  11. 2 cup chicken broth
  12. 2 cup milk, warmed
  13. 3 Ts avocado oil
  14. 1/2 ts sea salt
  15. black pepper to taste
  16. parsley for garnish
  17. 25 g cake flour(or flour), sift the flour one time
  18. 25 g unsalted butter

Cooking Instructions:

  1. Make some roux: heat a sauce pan with medium heat and add the butter to melt with a whisk(continue to stir with a whisk).

2. Keep stirring until it melts and add the cake flour into the sauce pan to keep stirring until it smells fragrant. Turn off the heat. Set aside and cool down.

3. Heat a pan with medium heat and 2 Ts avocado oil into the pan.

4. Add the garlic to stir for 1 minute.

5. Add the whelk meat into the pan to keep stirring them for 1 minute.

6. Add half of amount white wine into the pan to flambé(the process of blowing off alcohol) for 2 minutes. Turn off the heat and set aside.

7. Heat an oven pot with medium heat and add 1 Ts avocado oil and the bacon into the oven pot to stir it for 1 minute.

8. Add the celery, onion, potato, mushrooms, cauliflower, and cabbage into the oven pot to keep stirring.

9. Add remaining white wine and the sea salt into the oven pot to flambé again for 2–3 minutes.

10. Add the cooked whelk meat into the oven pot.

11. Add the chicken broth into the oven pot to keep boiling for 2 minutes. Add some sea salt if it is too bland.

12. Preheat the oven to 390F. Cook in a preheated oven about 20 minutes.

13. After 20 minutes, Turn off the oven heat and take out the oven pot. Heat it on medium low heat.

14. Add the warm milk and the roux into the oven pot to boil them shortly.

15. Sprinkle some black pepper into the oven pot and turn off the heat.

16. Serve it with garnish.
