Cold Noodles with Tomatoes
The other day, my daughter ANNE sent a picture that was a picture of this dish she made from scratch. Also she said “it’s so delicious!” This recipe is from NYT Cooking by Eric Kim @ericjoonho. The cold noodles we are familiar with always are delicious. My family loves cold noodles during the summer. Even better is that it was easy to make, so it was the best for a simple meal. I picked ripe tomatoes and brought them from my garden. I took a large bite and thanked again for the sweetness and freshness. My tomatoes are still bearing fruit. And I used some anchovy broth instead of water based on this recipe. Because, the taste of the deep broth gave the traditional cold noodle taste rather than the water. The chef’s explanation of many types of garnish was very helpful. This dish tasted more luxurious than I expected with fresh tomatoes. Thank you so much for a new recipe.

Ingredients:
- 3–4 cups tomatoes, sliced
- 2 tsp sea salt
- 10 ounces dried naengmyeon noodles(or somyeon)
- 1/4 cup vinegar
- 2 tbsp soy sauce
- 2 tbsp sugar
- 1 tsp garlic, minced
- 1/2 tsp Dijon mustard
- 1/2 tsp sesame oil
- 2 cups anchovy broth
- 1 tbsp sesame seeds
- 2 radishes, thinly sliced
- 2 green onion, thinly sliced
- 2 cups cubed ice
Cooking Instructions:
- Put the tomatoes into a bowl and sprinkle the sea salt to toss well. Set aside until juicy for 10 minutes.
2. Meanwhile, put the vinegar, soy sauce, sugar, garlic, mustard, and sesame oil into a bowl to mix well.
3. After 10 minutes, add the tomatoes into the mixed sauce bowl to toss well gently.
4. Add the anchovy broth into the bowl and add the radish, green onion, and sesame seeds into the bowl. Set aside.
5. Heat a pot with medium high heat and add water to boil. Add the noodles and stir with a wooden spoon. Cook them for 3–4 minutes.
6. Take a sample to taste. When you chew the noodles, there shouldn’t be any hard stuff inside. Be sure not to overcook them or they’ll go soggy.
7. Strain and rinse the noodles in cold running water until they aren’t slippery any more and are well cooled.
8. Drain the noodles with a strainer and divide them into a serving bowl.
9. Pour the tomato mixture into the serving bowl.
10. Serve right away(or right before serving, add some ice).
