Coleslaw(Cabbage Salad)
…. “KFC coleslaw with fried chicken”. This was the first time I ate coleslaw in Korea. I used to think of cabbage pickles at that time. Coleslaw is a side dish consisting of finely chopped raw cabbage with a salad dressing. Few days ago, my friend gave me fresh lemons which she picked them from her house backyard. I added fresh lemon juice today. It’s a season when cabbage is very delicious. Let’s eat a lot!
Servings: 5
Time: 40 minutes
Ingredients:
- 5 cup cabbage, soaked into cold water for 20 minutes and chopped
- 1 red paprika, chopped
- 1 yellow paprika, chopped
- 1 cup onion, chopped
- 1 canned sweet corn, cleaned with hot water
For dressing:
- 2/3 cup mayonnaise
- 2 Ts triple mustard
- 3 1/2 Ts sugar
- 4 Ts vinegar
- 1 ts sea salt
- 3 Ts fresh lemon juice
- black pepper powder to taste
Cooking Instructions:
- Drain the vegetables and chop them into a tray. Set aside.
2. Mix the mayonnaise, triple mustard, sugar, vinegar , sea salt, black pepper powder, and fresh lemon juice into a bowl well.
3. Add the chopped vegetables into the bowl and mix them well with a wooden spoon.
4. Keep it in a refrigerator to eat 1 hour later.
