Corn Cheese
….I made Korean style corn cheese with fresh corn and there’s so much fresh corn in season right now. It’s so incredibly delicious. Korean restaurants almost always serve some side dishes before they bring out the main dish in many places. Once we see the melting cheese on top of corn, we can’t resist spooning some up. It upgrades the flavor to add some ranch dressing in it. This dish is the perfect amount of sweet, salty, creamy and gooey. It makes for a really tasty side dish, or serve it like an appetizer with chips or bread for dipping. Servings: 2–3
Time: 20 minutes
Ingredients:
- 2 cup fresh corn kernels
- 3 Ts ranch dressing
- 1 cup mozzarella cheese
- 1 Ts butter
- Parsley for garnish
Cooking Instructions:
- Peel the corn kernels.
2. Heat a cast iron pan with medium low heat and add the butter to melt.
3. Put the corn kernels into the cast iron pan to stir them for 2 minutes.
4. Add the ranch dressing into the cast iron pan to stir them until the moisture is gone.
5. Sprinkle the mozzarella cheeses on top of the corn kernels.
6. Heat down the cast iron pan to low heat for 5 minutes with a lid.
7. Turn off the heat and use a torch to upgrade the flavors.
8. Sprinkle some parsley on top of the corn cheese.
9. Serve it hot.
