Cornbread
….My husband is a fan of cornbread, so when he sees cornbread he must eat it. Cornbread is a quick bread made with cornmeal. I have the perfect recipe for soft, moist, and buttery cornbread with crispy-crunchy edges. One of the great advantages of cornbread is that it keeps well and does not need to rise like yeast breads do. This quick bread has become more popular in recent years. I served thick slices of buttery yellow cornbread with sweet fig jam to my husband as breakfast. It has the texture of yellow corn kernels, making it more savory. Being able to eat whatever you want when you want is a small happiness. I guarantee this is the best cornbread recipe you’ll try!! There are numerous regional variations of cornbread. The simplest are a mixture of cornmeal, milk, butter, and egg, and baked in a cast iron. This is one of my favorite recipes that most people will love. This recipe is from@recipe_tin.

Ingredients:
- 3/4 cup yellow cornmeal, medium grind
- 1 1/2 cups flour(all purpose)
- 1 tbsp baking powder
- 1/2 cup white sugar
- 1/4 tsp salt
- 1 cup canned creamed corn
- 1/2 cup melted butter, unsalted +1 tbsp butter for greasing cast iron
- 2 eggs, lightly whisked
- 3/4 cup(185 ml) milk
Cooking Instructions:
- Preheat the oven to 425 F. Place a cast iron skillet in the oven while making the batter.
2. Put the cornmeal, flour, baking powder, white sugar, and salt into a bowl to whisk them evenly with a whisk. Set aside.
3. Put the canned creamed corn, melted butter, eggs, and milk into another bowl to mix well.
4. Pour wet mixture into dry mixture to mix well.
5. Remover the cast iron skillet from the oven to counter and heat down to 375 F. Place 1 tbsp butter onto the cast iron skillet. Swirl to melt and go up the sides.
6. Pour the batter into the cast iron skillet and cook in a preheated oven about 30 minutes.
7. Bake for 30 minutes or until the top is light golden brown and a skewer inserted into the middle comes out clean.
8. Turn off the oven heat and remove the iron cast skillet onto a counter.
9. Rest 15 minutes in skillet before turning out to cut.
10. Best served warm.
