Cucumber Salad with Garlic Herb Vinaigrette

….It’s the easiest recipe in the world that you can make quickly when you don’t have pickled cucumbers sometimes. Of course, the taste is different from pickled cucumber, but it does not lack flavor as a side dish. I got fresh rosemary, parsley, parsley flower, thyme from my garden, and I added fresh finger limes. It’s what’s inside finger limes that makes them special. When cut open(they can also be snapped in half) they reveal a multitude of tiny spherical vessels, ranging in color from pale yellowish-green to nearly pink. They also have small, cream-colored seeds. Squeezing each half forces these little bubbles out, which can be eaten or used in cooking. When chewed, they pop in your mouth, releasing their tart, lemony juice. Isn’t it interesting? It was the first time my husband saw finger limes, and he was curious about the taste and tried it with his mouth…. “fireworks exploding in my mouth!!” How sour it was!! The finger limes bursting one by one made the cucumber salad fresher.

Servings: 3

Time: 20 minutes

Ingredients:

  1. 6 Persian cucumbers, Peeled and sliced
  2. 1/2 red onion, finely diced
  3. finger limes for garnish(this is optional)

For garlic herb vinaigrette:

  1. 1 1/2 tbsp red wine vinegar
  2. 3 tbsp extra virgin olive oil
  3. 1/2 tsp Dijon mustard
  4. 1 garlic clove, minced
  5. 1 tsp parsley, oregano, thyme(mixed)
  6. 1/2 tsp white sugar
  7. 1/2 tsp sea salt
  8. 1/2 tsp black pepper

…..all shake in jar

Cooking Instructions:

  1. Put the red wine vinegar, extra virgin olive oil, Dijon mustard, sugar, parsley, oregano, thyme, garlic, sea salt, and black pepper into a jar. Shake them well and store it into a refrigerator.

2. Put the cucumber and red onion into a bowl.

3. Toss with dressing.

4. Serve it with finger limes on top of the cucumber salad.
