Five-spice Beef Salad(ohyangjangyuk salad)
….This recipe is similar to a boiled beef salad. When I boil the beef, I add some spices in it. After boiling, the beef is marinated with five very strong spices. My husband likes this dish with strong spices. Unfortunately, I couldn’t find one spice-dried cloves. Cloves are dried flower buds from the clove tree. They are a popular spice that people use in soups, stews, sauces, and rice dishes. Cloves are very small size but it tastes very strong and spicy. It’s used to flavor various foods. Today, I added black peppers instead of cloves for spicy taste. I liked the result with the soft smell, but my husband didn’t. If you like the strong taste of this dish, you have to add cloves in it. I made it a long time ago and it was delicious to me. This recipe is from @comble2.

Time: 1 hour 30 minutes plus 3-5 hours soaking beef with cold water
Ingredients:
- 2.2 lb(1 kg) beef shank(round steak), soaked with cold water for 3–5 hours(change the water 2–3 times)
- 1200 ml katsuobushi broth
- 2 cucumbers, sliced thinly
- 3 Ts garlic, chopped for garnish
- 5–6 white parts of green onions, sliced thinly
- 1 onion
- 5–6 green parts of green onions
- 1–2 dried red peppers
- 1 ginger
- 2–3 garlic cloves
- 30 black pepper corns
- 4 star anise
- chili oil to taste
For dressing:
- 50 ml tsuyu(comble’s tsuyu)
- 1–2 tbsp vinegar
- 2 tbsp soy sauce
- 1 tsp sugar
- 1 tsp sesame oil
- 1/2 tbsp chili oil
- 1 tbsp avocado oil
- 3/4 tsp sea salt
….all mixed and keep it in a refrigerator
Cooking Instructions:
- Remove the blood, excess fat and impurities by soaking with cold water for 3–5 hours(change the water 2–3 times).
2. Heat a big pot with high heat and add the beef, green onion, onion, dried red pepper, ginger, garlic cloves, black pepper corns, and katsuobushi broth into the pot to boil.
3. After boiling, heat down to medium heat to boil them for 40 minutes with a lid.
4. Meanwhile, mix the tsuyu, vinegar, soy sauce, sugar, sesame oil, chili oil, avocado oil, black pepper, and sea salt into a jar well and store it into a refrigerator.
5. After 40 minutes, turn off the heat and leave the pot for 30 minutes with the lid(let the seasoning go well into the meat).
6. After 30 minutes, take out the beef onto a tray. Sift the broth with a strainer(you can drink it and it tastes delicious).
7. Slice the boiled beef and cucumber thinly and soak the white parts of green onion with cold water 10 minutes.
8. After 10 minutes, sift the sliced green onions with a strainer.
9. Place the cucumber, sliced beef, and green onion onto a serving plate. Sprinkle some garlic and chili oil on top of the green onion.
10. Serve it with dressing.
