French Toast with Goat Cheese
….This classic French Toast is a recipe that I absolutely love to make, especially on a lazy weekend morning. There’s something special about this rich and delicious French Toast, made with goat cheese and apricot jam. After savoring it a few weeks ago at Juniper Bistro in Banff, I decided to prepare it for my husband’s breakfast, and I can have it on the table in minutes. French toast has a unique way of starting the morning off in the best way. Here’s a little tip: I love French toast made with heavy cream, but it’s also perfectly fine with whatever milk I have in the refrigerator. Usually, I use half heavy cream and half milk in the egg mixture. Additionally, I’ve experimented with various sweeteners and had great success with strawberry jam, maple syrup, and apricot jam. However, I didn’t add sugar to the egg mixture; I prefer it not overly sweet.

Time: 20 minutes
Ingredients:
- 3 slices of bread
- 3 eggs
- 1/2 cup milk
- 1/2 cup heavy cream
- 1/4 tsp sea salt
- 1 tbsp unsalted butter
- 2 tsp avocado oil
- 1 1/2 tbsp goat cheese
- Strawberry jam to taste
- Apricot jam to taste
- fresh strawberry (optional), sliced
- some greens (optional)
Cooking Instructions:
- Beat the eggs on a tray.
2. Add the milk, heavy cream, and sea salt to the tray, and mix them well.
3. Soak the sliced bread in the egg mixture thoroughly.
4. Heat a pan over medium-low heat and add the avocado oil. Grill the bread until it’s cooked on the inside.
5. Place unsalted butter on the bread and grill them until they are golden brown.
6. Place them on a plate.
7. Place a piece of French toast on a cutting board and top it with goat cheese, strawberry jam, and maple syrup.
8. Fold it in half.
9. Sprinkle some apricot jam onto a serving plate.
10. Place the French toast on the serving plate and garnish with strawberry slices and a sprig of greens on top of the plate.
11. Serve it.
