Fried Beef Roll with Mozzarella

….I thinly sliced some beef today because the string cheese I bought for my grandchildren’s snack was nearing its expiration date. I rolled the beef slices around the cheese, coated them with flour, egg, and breadcrumbs, and lightly fried them in clean oil. Also I made two different sauces and served them as snacks. The cheese oozing out is visually appealing, and the nutty finish it gives is perfect. However, it can be a bit heavy to eat a lot, so I highly recommend serving it with two simple sauces that complement each other to eliminate the heaviness. I found that serving a simple salad on the side helped both in presentation and taste. Alternatively, serving a consommé as an appetizer alongside also brings a clean finish rather than heaviness. This approach elevates the dish to a more sophisticated level for entertaining guests. Thinly slicing the beef is best when it’s slightly frozen, and adding a bit of mayonnaise on top of the cheese slice for seasoning completes all the preparation. It’s best to serve them warm on the table just after frying, if possible.

Ingredients:

  1. 600 g beef ribeye, sliced thinly
  2. 8 string cheeses, cut in half
  3. 2 tbsp potato starch
  4. 2 tbsp flour
  5. 2 eggs
  6. 1/2 tsp mirin
  7. 3 cups panko
  8. canola oil to fry
  9. mayonnaise to taste
  10. iceberg lettuce to taste
  11. radicchio to taste
  12. olive oil to taste
  13. sea salt to taste
  14. lemon zest to taste

For sauce 1:

  1. 3 tbsp tomato ketchup
  2. 1 tbsp honey
  3. 1 tbsp Worcestershire sauce

For sauce 2:

  1. 3 tbsp crunch mustard
  2. 1 tbsp tomato ketchup
  3. 1 tbsp honey
  4. 1 tbsp Worcestershire sauce

Cooking Instructions:

  1. Combine the tomato ketchup, honey, and Worcestershire sauce in a bowl and mix well to create sauce 1.

2. Combine the crunch mustard, tomato ketchup, honey, and Worcestershire sauce in a bowl and mix well to create sauce 2.

3. Place a slice of beef onto a tray.

4. Place a piece of mozzarella in the middle of the beef slice.

5. Spread a layer of mayonnaise over the mozzarella.

6. Roll the mozzarella cheese in thinly sliced beef. Roll up all the remaining ingredients.

7. Coat each beef roll thoroughly with the potato starch and flour.

8. Beat the egg, mirin, and a pinch of sea salt in a bowl. Dip each beef roll piece in the beaten egg and coat it with panko. Transfer to another tray.

9. Heat a pan over medium-high heat and add canola oil. Heat the oil to 140°C (test with a wooden chopstick — there should be bubbles around it). Place several layers of paper towels on a sheet pan. Fry the beef roll pieces until golden brown.

10. Serve with a side of salad and your desired sauce.
