Fried Crab Stir-Fry

….The blue crab is not only famously delicious but also has excellent various health benefits. It is one of the ingredients that everyone loves. To choose a good blue crab, it’s best to pick one that feels resilient and heavy when held. Fresh blue crabs with full roe are sweet, tender, and bursting with umami flavor. Today, I bought a male blue crab. Enjoy crispy blue crab by frying it whole! Have you tried fried blue crab? You can get all the nutritional benefits, including Chitosan contained in the shell. Choose small blue crabs, trim the sharp parts to make them easier to eat, and marinate them with ginger-sake, salt, and pepper to eliminate the fishy smell and enhance the flavor. I coated the blue crab thoroughly with starch and fried it twice so that even the shell can be eaten crisply. Although I usually prefer to eat blue crab as crab marinated in soy sauce (gejang), I couldn’t find any female crabs today, so I fried them until crispy and then stir-fried them in a sauce.

Servings: 4

Time: 40 minutes

Ingredients:

  1. 4 fresh crabs, cleaned and cut in half
  2. 2 tbsp ginger sake
  3. sea salt to taste
  4. black pepper to taste
  5. potato starch to taste
  6. canola oil, ideal for frying
  7. roughly chopped some almonds

For sweet chili sauce:

  1. 1.5 tbsp gochujang
  2. 1 tbsp chili oil
  3. 1 tbsp Mat-Gan-Jang
  4. 1 tbsp sweet chili sauce
  5. 1 tbsp rice syrup
  6. 1 tbsp sugar
  7. 2 tbsp mirin
  8. 1 tbsp vinegar

Cooking Instructions:

  1. Pat the crabs dry with kitchen towels. Sprinkle sea salt, black pepper, and ginger sake over them. Set aside for 10 minutes.

2. Meanwhile, combine the gochujang, chili oil, Mat-Gan-Jang, sweet chili sauce, rice syrup, sugar, mirin, and vinegar in a bowl and mix well.

3. After 10 minutes, coat the marinated crabs evenly with potato starch.

4. Heat a pan over medium-high heat and add canola oil. Heat the oil to 170°C (test with a wooden chopstick — there should be bubbles around it). Place several layers of paper towels on a sheet pan. Fry the crab pieces until they are light brown.

5. The crab is fried once more until it is crispy and golden brown. Then, place them on the sheet pan.

6. Heat a pan over medium heat and add the mixed sweet chili sauce to the pan.

7. When the sauce becomes thick and sticky in the pan, toss in the fried crab and mix well.

8. Sprinkle the chopped almonds over the crabs.

9. Serve it.
