Fried Fish & Tartar sauce(Fish & Chips)

….Fish and chips is a popular hot dish consisting of fried fish in crispy batter, served with chips. The dish originated in England. Freshly cooked and piping hot fish and chips. I didn’t make fried potato chips. If there is some leftover fried fish, I make fish sandwiches with the leftovers. Tartar sauce is usually served with this dish but it’s good to serve with sherry vinegar as well. I will use the tartar sauce and add a minced boiled egg as a spread for a sandwich. My friend introduced a special tempura flour to me for crispy batter. It was great and crispy on the outside. There was a crunching sound. Fresh fish was very sweet and soft on the inside….yummy!!

Servings: 4–5

Time: 30 minutes plus 30 minutes for keeping batter in the refrigerator

Ingredients:

  1. 400 g-600 g fish fillets, cut into cylinder shapes and pat dry
  2. salt to taste
  3. black pepper to taste
  4. 2 Ts sake
  5. 1/2 cup cake flour

For batter:

  1. 150 g tempura flour(GOGI)
  2. 1/2 ts black pepper
  3. 1 1/2 ts sea salt
  4. 1 ts baking powder
  5. 1 lemon zest
  6. 1 egg
  7. 1 cup beer

For tartar sauce:

  1. 2 1/2 Ts onion, minced
  2. 2 1/2 Ts pickle, minced
  3. 2 Ts capers, minced
  4. 2 1/2 Ts mayonnaise
  5. 2 1/2 Ts plain yogurt
  6. 1 Ts honey
  7. 1 Ts horseradish
  8. 1 Ts mustard
  9. black pepper to taste
  10. 1 ts fresh dill, minced
  11. 1 boiled egg(for sandwich spread)

Cooking Instructions:

  1. Mix the sea salt, black pepper, baking powder, lemon zest, egg, tempura flour, and beer into a bowl well. Store it in the refrigerator for more than 30 minutes(the batter is crispy when it is cold).

2. Put the fish fillet into a tray and sprinkle salt, black pepper, and sake onto the fish. Set aside for 10 minutes and pat dry.

3. Mix the tartar sauce ingredients into a bowl well and set aside.

4. Coat the cake flour onto the marinated fish well lightly.

5. . Heat a pan with medium high heat and add the canola oil into the pan. Heat the oil to 350 F(when you put wooden chopstick in the oil, there should be bubbles around the chopstick). Place several layers of paper towels on a sheet pan.Gently shake off excess cake flour before cooking each piece of fish. Put the fish into the cold batter. Fry them until golden brown.

6. Place the fried fish onto a tray(remove some oil).

7. Serve it hot with tartar sauce.

Make fried fish sandwich:

  1. Mix the boiled egg into the tartar sauce for spread.

2. Toast the bread in toaster and spread the sauce onto the bread.

3. Put some baby romaine on top of the sauce.

4. Put the fried fish and some sauce on top of the romaine.

5. Put another piece of toast on top.
