Fried Onion Ring
….Onion is one of my favorite ingredients and my family likes it also. Onions are a staple in the kitchen. It’s good to add some onions with various foods, and you can use it to reduce some added sugar into food. Onions not only provide flavor, but they also provide important nutrients. Onions may be among the vegetables that will be prized not only for their addition to our cuisine, but for their value-added health characteristics. My daughters have loved onions since they were little, so there was no difficulty in eating them together. When my daughters were young, I made this dish often as a snack. It’s been a really long time since I made fried onion rings. Always the whole family ate it because they were crunchy. It is common knowledge that chopping onions causes watery eyes. To reduce tears during chopping, I recommend chilling an onion for 30 minutes then cutting off its top. The person should then peel the outer layer of the onion and leave the root intact, as this part has the highest concentration of lachrymatory agent. It doesn’t need any specific recipe.

Time: 40 minutes
Ingredients:
- 2 onion, cut into 1/2 inch rings
- 2 eggs, beaten
- 2 tbsp mixed vegetables juice
- 3 cups panko
- 1/3 cup flour
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1/4 tsp Italian mixed herbs
- canola oil to fry
Cooking Instructions:
- Put the sliced onion onto a tray and sprinkle the mixed vegetables juice, sea salt, and black pepper onto the sliced onion for 5 minutes.
2. After 5 minutes, coat the onion pieces with the flour lightly and then dip them in the beaten eggs with a pinch of sea salt. Press them into the panko( add 1/4 tsp Italian mixed herbs into the panko). Set aside.
3. Heat a pan with medium high heat and add the canola oil into the pan. Heat the oil to 350 F(when you put wooden chopstick in the oil, there should be bubbles around the chopstick). Place several layers of paper towels on a sheet pan. Put the onion into the pan to fry them until light brown.
4. Transfer the onion onto the sheet pan. Set aside(remove some oil).
5. Serve it with ketchup(or fresh yogurt) as a snack or a side dish.
