Fried Sweet Potato
….Every day during the pandemic is so hard for everyone. My husband looked very tired today, so I made an ultra-simple memorable snack for my husband. JOHN smiled and said “Wow!! It’s fried sweet potato in a triangular bag!..” He ate it quickly to see the bottom of the triangular bag. I had a day comforting my husband with a small snack. This is a street snack from my husband and my childhood in Korea. My husband asked me a couple questions…Did you add some sugar? How is it so sweet and crispy? …..My husband liked it saying he ate it for the first time in 10 years. Thank you for always relaxing us with memories.

Time: 20 minutes
Ingredients:
- 5 sweet potato, peeled and julienned
- canola oil to fry
Cooking Instructions:
- Heat a pan with medium high heat and add canola oil into the pan. Heat the oil to 350 degrees(when you put wooden chopstick in the oil, there should be bubbles around the chopstick). Place several layers of paper towels on a sheet pan.
2. Add the julienned potato into the pan to fry until golden brown.
3. Take out the sweet potatoes onto the sheet pan.
4. Set aside a few minutes and serve it as a snack.
