Gozleme
….These Turkish Gozleme with beef are savory homemade flatbreads made completely from scratch filled with ground beef, spices, herbs, and feta cheese. It’s popular as a street food or part of a Turkish breakfast. This is Turkish flatbread stuffed with your choice of fillings and an easy to make recipe without yeast. You don’t need to let this dough rise or anything. I kneaded this by hand, but feel free to use your mixer and it’s going to be a lot easier. They’re incredibly delicious and full of great flavors. A tender flatbread that’s perfectly crispy and golden on the outside and filled with savory ingredients. Many traditional Gozleme recipes contain just flour, salt, and water. But I added olive oil for softness. When I was making the batter, it seemed like a hand-pulled soup from flour batter in Korea. It made for a very hearty lunch for JOHN and me.

Time: 1 hour
Ingredients:
- 2 1/2 cups flour(all purpose)
- 1/3 cup extra virgin olive oil
- 3/4 cup water
- 1 ts sea salt
- 3 Ts avocado oil
For filling:
- 2 garlic cloves, minced
- 1 onion, chopped
- 500 g ground beef
- red, yellow bell peppers, diced
- 1 1/2 ts cumin powder
- 1 ts paprika powder
- 1/2 ts cayenne powder(or 1 ts)
- 3/4 ts sea salt
- black pepper to taste
- 120 g spinach
- 120 g feta cheese
- mozzarella to taste
Cooking Ingredients:
- Put the flour, olive oil, water, and sea salt into a bowl to knead them by hand well for 2–3 minutes.
2. Cover the dough with a wrap and set aside.
3. Heat a pan with medium high heat and add 1.5 Ts avocado oil into the pan. Add the garlic and onion into the pan stir them for 2 minutes.
4. Add the bell pepper into the pan to keep stirring for 1 minute.
5. Add the ground beef into the pan to stir them until the moisture is gone(no longer pink).
6. Add the cumin powder, paprika powder, cayenne powder, sea salt, and black pepper into the pan to stir them 1 minute.
7. Add the spinach and feta cheese for assembling into the pan. Set aside.
8. Cut dough into 4 and roll out into 14 inches x 8 inches.
9. Put the filling and mozzarella onto half of dough and fold over to cover(press to seal edges).
10. Heat a pan with medium heat and add 1.5 Ts avocado oil into the pan. Slide gozleme onto floured pizza paddle into a large pan.
11. Cook it for 3 minutes until golden and crisp. Flip it to cook 3 minutes.
12. Cut into 4 or 6 pieces.
13. Best served hot while crisp.
- Reheat in 350 F oven 7 minutes on tray or pan fry again.
- Dough keeps 3 days.
- Don’t assemble. Keep raw gozleme to cook later.
