Green onion Kimchi(Jjokpa Kimchi)

….I can find jjokpa around here these days. I’ve had this Kimchi before. I want to try making this Kimchi. I searched lots of recipes, and finally I found a simple recipe and fast to make but very delicious. It’s refreshing with a jjokpa taste that’s lively and spicy. JOHN said “It’s working up my appetite!” while he ate jjokpa kimchi. We have to eat seasonal food for destressing easily.

Time: 1 hour

Ingredients:

  1. 2.2 lb green onion(or jjokpa), clean and dry
  2. 2/3 cup fish sauce
  3. 1 cup onion
  4. 1 cup chili powder(or 1 1/3 cup)
  5. 3.5 Ts salted shrimp
  6. 5 Ts garlic
  7. 3.5 Ts sugar
  8. 3 Ts flour
  9. 2 cup water

Cooking Instructions:

  1. Soak the jjokpa with the fish sauce in a big bowl(soak the head part of the jjokpa first and flip 3 times every 5 minutes for 15 minutes and then soak all together for 15 more minutes).

2. Meanwhile, make flour porridge. Heat a pot with medium heat and add the water and flour to mix them well with an egg whisk. Boil them until boiling and turn off the heat and set aside to cool it down(keep stirring with an egg whisk until boiling).

3. After 30 minutes, Pour the soaked fish sauce from the jjokpa into a bowl and add the onion, garlic, and salted shrimp into the bowl to grind them.

4. Add the chili powder, sugar into the bowl and mix them well evenly.

5. Add the flour porridge into the bowl and mix them well evenly.

6. Mix the salted jjokpa and the mixed sauce into the big bowl gently.

7. Put it in an airtight container to eat later. If you want to ferment the kimchi, keep it at room temperature for a couple of days until it tastes a little sour and then put it in the fridge.
