Green onion Sukchae with Dried Seaweed(gobchang kim)
….Sukchae refers to parboiled or pan-fried vegetables. The vegetables that are typically parboiled include spinach, napa cabbage, and soybean sprouts with basic seasoning. Sukchae side dishes take more effort than meat side dishes. Vegetables are trimmed, washed, parboiled, seasoned, and several processes are required. I have been eating it since I was young, and I still love it, but it is a cooking method that is not welcomed by my daughters. Today, I made sukchae with seaweed(gobchang kim) which I received as a gift from a friend. The texture is slightly different, but it is so savory, a little sweet and delicious. There is also a chewy taste. I put green onion in as a seasoning, but I added plenty of seaweed as the main ingredient and mixed it for my husband and me. Sukchae is not suitable for long-term consumption, so I remember my mother who made them for every meal. It seems that diligent mothers can serve it as a side dish.

Time: 50 minutes
Ingredients:
- 300 g green onions, parboiled and cut into 1.5 inches
- 3–4 gobchang kim(dried seaweed), grilled lightly
- 1 tbsp mixed fish sauce(gukganjang: tuna sauce: fish sauce= 1: 1: 1)
- 1–2 red pepper, removed seeds and sliced
- 1 tbsp sesame oil
- 1 tbsp toasted sesame seeds
- 1/2 tsp sea salt
Cooking Instructions:
- Heat a pot with medium high heat and add 5 cup water and sea salt into the pot to boil. Parboil the white part of green onion into the pot first for 20 seconds and add the green part together into the pot for 20 seconds more.
2. Turn off the heat and clean the parboiled green onion with cold water and soak them with cold water for 30 minutes(help to remove some spicy tastes).
3. Meanwhile, heat a pan with medium heat and grill the gobchang kim lightly. Place them into a tray and set aside.
4. After 30 minutes, sift the parboiled green onion with a strainer.
5. Put the green onion into a tray and add the mixed fish sauce into the tray to mix well lightly. Set aside.
6. Crush the grilled gobchang kim roughly with hands.
7. Add the seasoned green onion, red pepper, sesame seeds, and sesame oil into the crushed gobchang kim to mix well softly.
8. Serve it.
