Grilled Beef Ribs Tacos
….I have some leftover marinated beef ribs in my refrigerator. I was thinking about what to make…..Um…taco!! This dish was prepared with all the leftover ingredients from my refrigerator. A taco is a traditional Mexican dish consisting of a small hand- sized corn or flour tortilla topped with a filling. The tortilla is then folded around the filling and eaten by hand. You can really fill a taco with anything you want. Original tacos from Mexico may consist of a fresh corn tortilla, some kind of marinated meat, onion, and fresh lime juice. Americanized version tends to consist of ground beef, cheese, lettuce, salsa, and sour cream. It is great to have lunch with a taco, and you can make it with your refrigerator ingredients. My husband likes crispy tortilla, so I grilled it with a pan for crispiness. It’s really good even with grilled beef ribs in the taco. Tomato salsa and avocado purée upgrade the taste.

Time: 40 minutes
Ingredients:
- 400 g grilled beef ribs
- 3–4 flour tortillas
- 1/2 fresh corn kernels, peeled
- plain yogurt for dipping(or sour cream)
- cucumber for garnish
- green pepper for garnish
- parsley for garnish
- 1 Ts avocado oil
For tomato salsa:
- 1 cup tomato, removed seeds and diced
- 3 Ts onion, minced
- 1 1/2 Ts lame juice
- 2 Ts parsley, chopped(or cilantro)
- 1/2 ts muscovado
- 1 ts garlic, minced
- sea salt to taste
- black pepper to taste
….all mixed
For avocado purée:
- 1 avocado, peeled
- 1 Ts lemon juice
- 1/2 Ts lime juice
- 1/2 ts honey
- sea salt to taste
- black pepper to taste
- 2 Ts olive oil
Cooking Ingredients:
- Put the diced tomatoes, onion, lime juice, parsley(or cilantro), muscovado, garlic, sea salt, and black pepper into a bowl to mix well gently. Set aside.
2. Blend the avocado, lemon juice, lime juice, sea salt, olive oil, and black pepper into a bowl with a hand blender well. Set aside.
3. Heat a pan with medium heat and add the avocado oil and corn kernels into the pan to stir them for 2 minutes. Set aside.
4. Heat a pan with medium high heat and grill the beef short ribs until golden brown. Set aside.
5. Heat a pan with low heat and grill the tortilla both sides until the moisture is gone.
6. Place the grilled tortilla onto a wood board and put some avocado purée and corn kernels onto the grilled tortilla.
7. Add some tomato salsa, cucumber, and green pepper on top of the corn kernels.
8. Put the grilled beef short ribs on top of the taco.
9. Serve it folded with some plain yogurt .
