Grilled Dried Pollock with Spicy Sauce(hwangtae gui)
….Hwangtae is one of Korean people’s favorite ingredients. The best dried pollock is dried by wind from the sea which is called Hwangtae. The fish are caught in the cold wintertime and hung out to dry. The fish are dried out in the brisk ocean breeze and as the temperatures change from daytime to nighttime they freeze and thaw out the fish over and over. When it’s finally fully dried it has unique texture that’s both flaky and spongy. It’s rich in protein and has a good taste. It is also a good ingredient for making anchovy broth. I made grilled dried pollock with spicy sauce and added stir- fried green onion. These make a great combination. The marinade was well seasoned and grilled softly, so this dish can be served as special food. This recipe is from @booth108kwon.
Servings: 2–3
Time: 30 minutes, plus 1 hr 30 minutes for soaking with water and Mirin, and marinating with spicy sauce
Ingredients:
- 2 dried pollock, cut head and tail, and soaked with 1L water + 2 Ts Mirin for 1 hour and clean
- 1 L water
- 2 Ts Mirin
- avocado oil to grill
- 2 cup green onion(Korean Leek), minced
- salt to taste
- 1 ts sesame oil
For spicy sauce:
- 1 Ts garlic, minced
- 2 Ts chili powder
- 1 ts spicy chili powder
- 1 Ts soy sauce
- 1 ts fish sauce
- 1 Ts sugar
- 2 Ts rice syrup
- 2 Ts sake
- 1 Ts perilla oil
- 1 Ts gochujang
….all mixed
Cooking Instructions:
- Put the water and Mirin into a tray and soak the dried pollock into the tray for 1 hour.
2. Mix the garlic, chili powder, spicy chili powder, soy sauce, fish sauce, sugar, rice syrup, sake, perilla oil, and gochjang into a bowl well. Set aside.
3. After 1 hour, clean the soaked dried pollock and cut off all of the fins. Take out thorns(only what can be removed).
4. Remove some water with paper towels.
5. Spread the spicy sauce evenly on both sides. Set aside for 30 minutes.
6. Heat a cast iron pan with low heat and add 2 Ts avocado oil into the cast iron pan.
7. Stir fry the green onion and some salt into the cast iron pan for 1–2 minutes. Add the sesame oil into the cast iron pan and set the stir fried green onion aside.
8. Heat the same cast iron pan with low heat and add 2 Ts avocado oil into the cast iron pan. Grill the marinated pollock into the cast iron pan until the moisture is gone(turn over once and grill well seasoned).
9. Turn off the heat and place the grilled pollock onto a serving plate with the stir fried green onion on top of the pollock. Serve it.
