….Everyone loves grilled pork back ribs with soy sauce. This dish is very popular in Korean cuisine. No one can deny the delicious smell of grilling before eating. Because it is our traditional food, each house has its own precious recipe. Mine is simple but it’s a recipe I learned from my mother. My mother said good ingredients are the best recipes. Frankly, it’s still hard for me to decide which pork back rib is good. It was difficult to pick and prepare, but I was already looking forward to the taste. My family enjoyed it a lot, and my two year old grandson SIWOO especially loved it and ate it deliciously with his two hands. Thank you SIWOO!! Simple mother’s recipe is always loved by family. Don’t forget to make it. It can also be served with spicy sauce noodles during summer.

Servings: 5–6

Time: 1 hour 30 minutes plus 13–15 hours for soaking with cold water and marinate

Ingredients:

  1. 2 kg pork back ribs, soaked cold water for 1–2 hours
  2. 200 g onion, grated
  3. 200 g pear, grated
  4. 200 g apple, grated
  5. 4 tbsp rice syrup
  6. 6 tbsp muscovado
  7. 12 tbsp soy sauce
  8. 8 tbsp garlic, minced
  9. 3 tbsp ginger juice
  10. 1/2 tsp black pepper
  11. 6 tbsp Mirin
  12. 1–2 tbsp sesame oil

Cooking Instructions:

  1. Remove the blood, excess fat and impurities by soaking with cold water for 1–2 hours.

2. After 2 hours, clean the pork back rib with running water and place them onto a tray.

3. Pat dry with paper towels and cut between bones. Put into a bowl.

4. Sprinkle the ginger juice onto the pork back ribs. Set aside for 30 minutes.

5. Meanwhile, blend the onion, pear, apple, and garlic with a blender well with a bowl.

6. Add the muscovado, rice syrup, soy sauce, Mirin, black pepper, and sesame oil into the bowl. Set aside.

7. After 30 minutes, marinate the mixed soy sauce into the pork back ribs well. Put them into a container and keep it in a refrigerator for 12 hours(season inside of the meat well).

8. After 12 hours, preheat the oven to 380F. Place the marinated pork back ribs onto a baking tray.

9. Cook in a preheated oven about 25 minutes.

10. After 25 minutes, remove the baking tray onto a counter and turn the pork back ribs upside down.

11. Cook in a preheated oven another 25 minutes.

12. After 25 minutes, turn off the oven heat and remove the baking tray onto a counter.

13. Serve it hot(or with spicy noodles).
