Gungjung Tteokbokki(tteok japchae)

….I made this dish for my grandson SIWOO who loves Garaetteok. When I find an ingredient that he likes, I make things like this. Gungjung tteokbokki is the traditional version of tteokbokki. This dish is mildly flavored with a soy sauce based sauce. It has a chewy texture. It’s a non-spicy dish and calls for a variety of colorful vegetables, mushrooms, and marinated beef. In fact, gungjung tteokbokki is also known as tteokjapchae perhaps because it is made in a similar fashion to japchae. Garaetteok( a cylinder-shaped white rice cake) is used in various ways in Korea. I used beef but you can use pork or chicken if you like. Likewise, feel free to use any vegetables you want. I added red paprika from my garden, a little paprika that was still hanging. And it tasted so sweet…

Servings: 4

Time: 50 minutes

Ingredients:

  1. 500 g garaetteok(cylinder shaped rice cakes for tteokbokki), store bought and cut into 4 pieces lengthways
  2. 250 g beef ribeye, julienned
  3. 200 g oyster mushroom, parboiled and tore into smell pieces
  4. 1 onion, sliced
  5. 2 red paprika, sliced
  6. 3 tbsp avocado oil
  7. dried seaweed for garnish, julienned

For marinated sauce:

  1. 4 tbsp Mat-Gan-Jang
  2. 1 tsp tuna sauce
  3. 1 tbsp Mirin
  4. 3 garlic cloves, minced
  5. 3 green onion, minced
  6. 1.5 tbsp sesame oil
  7. black pepper to taste

….all mixed

Cooking Ingredients:

  1. Put the garlic, green onion, Mat-Gan-Jang, tuna sauce, Mirin, sesame oil, and black pepper onto a bowl and mix well. Set aside.

2. Heat a pot with medium high heat and add 4 cup water into the pot to boil.

3. Poach the oyster mushroom into the pot for 1 minute and rinse them with cold water. Squeeze the mushroom with hands lightly and tear them into small pieces. Set aside.

4. Put the julienned beef and the poached oyster mushroom into a tray and add 3 tbsp mixed sauce into the tray to mix well evenly. Set aside.

5. Heat a pan with medium high heat and add 1 tbsp avocado oil into the pan to stir fry the marinated beef and mushroom until the moisture is gone. Set aside.

6. Heat the same pan with medium heat and add 1 tbsp avocado oil into the pan. Add the rice cake and 2 tbsp mixed sauce into the pan to stir them until golden brown. Set aside.

7. Heat a pan with medium high heat and add 1 tbsp avocado oil into the pan. Add the onion, paprika, and remaining mixed sauce into the pan to stir them for 1–2 minutes. Turn off the heat.

8. Add the stirred beef and stirred rice cake into the pan. Mix them lightly altogether. Sprinkle some sesame seeds onto the gungjung tteokbokki.

9. Serve it with some seaweed on top of the tteokbokki.
