How to make Balsamic Pearls(Balsamic Caviar)

….When you hear balsamic pearls, you probably think of small machines and other complicated sounding techniques. But anyone can make these easy balsamic pearls at home with just a few simple ingredients and a super simple method. These sweet and sour pearls are filled with concentrated balsamic vinegar flavor. Unlike when you just drizzle the vinegar over a dish there’s no ‘watering down’ in this balsamic. Not only do they taste great, but they look amazing too. My husband was very interested in how to make the pearls. The cold olive oil makes the pearls with some balsamic mixture. I think it’s a small form of science. I used one special ingredient, which is agar-agar. This is the magic ingredient that transforms the vinegar into wonderful, popping pearls. Also you can re-use the olive oil after creating these pearls, so there’s no waste. It seemed like a really fun game with JOHN.

Time: 40 minutes

Ingredients:

  1. 1 1/2 cup olive oil
  2. 1/2 cup balsamic vinegar
  3. 1/2 ts agar-agar

Cooking Instructions:

  1. Put the olive oil into a jar with a lid and store it into a freezer for 30 minutes.

2. Meanwhile, heat a sauce pan with medium heat and add the balsamic vinegar and agar agar into the sauce pan to boil.

3. Turn off the heat and set aside to cool down.

4. Pour the balsamic mixture into a sauce bottle.

5. After 30 minutes, take out the olive oil from the freezer onto a counter.

6. Drop the balsamic mixture into the cold olive oil and you should see it turn to pearls in front of your eyes.

7. Sift the balsamic caviar with a strainer(drain from the olive oil).

7. You can transfer the balsamic caviar to a small jar. Stores fine in the refrigerator for up to 2 weeks.
