Italian Almond Cookies
….Recently, I was looking for a recipe of cookies for my husband’s snack. When I saw these nubby little balls that look a bit wonky, it caught my heart. After checking the ingredients of the recipe, I couldn’t ignore this recipe and fell in love with it. This recipe is from @recipe_tin. The chef said “If there’s one word that captures these cookies, it’s rustic!”…….. Oh! It’s a cookie I have to get my hands on. They use almond flour instead of flour for these gluten free cookies, and it doesn’t need butter. And I added muscovado instead of sugar that I use for baking as it tastes great for us. When I tried to make it, it was easy and fun. The result is the cutest cookie I’ve ever seen. I try a lot of her recipes and am always satisfied and grateful. My husband loved it too and ate 3 cookies at a time quickly. Thank you so much @recipe_tin.

Ingredients:
- 2 cups almond flour
- 1/2 cup muscovado(or sugar)
- 2 tsp lemon zest
- 3 drops natural almond extract
- 1/8 tsp sea salt
- 1/2 cup dried cranberries
- 2 egg white, at room temperature plus extra white whisked
- 2 tsp honey
- 1 1/2 cups flaked almonds
Cooking Instructions:
- Mix the almond flour, muscovado, lemon zest, almond extract, and sea salt into a big bowl well.
2. Add the cranberries into the bowl. Beat the egg whites with the honey until soft peaks form(2 minutes speed 8 handheld beater). Eggs need to be at room temperature and not fridge-cold, because they aerate better when beaten. Pour the egg mixture into the big bowl to mix well lightly.
3. Scoop up about 1 tablespoon of the mixture and shape into a rough ball(no need to be neat balls).
4. Drop into whisked whites and turn to coat with spatula.
5. Drop into almond flakes to coat and press them to adhere.
6. Place on 2 lined trays 1" apart and preheat the oven to 375 F.
7. Cook in a preheated oven about 13–15 minutes(check at 12 minutes to see if nuts are ok).
8. After 15 minutes, remove the tray onto a counter and cool down.
9. Serve it as a snack and keep it for 10 days in airtight container.
