Jellyfish Salad(Haepari-naengchae)

Ingredients:

  1. 10–12 scallops
  2. 10 shrimp
  3. 2 cucumbers, julienned
  1. 1 lb salted jellyfish, washed 2–3 times and soaked for 30 minutes with cold water.
  2. 100 ml vinegar
  3. 3 Ts sugar
  1. 2 Ts muscovado(or sugar)
  2. 3 Ts vinegar
  3. 1 Ts sea salt
  4. 1 Ts mirin
  5. 2 Ts fresh lemon juice
  6. 5*5 kelp
  7. 1 Ts garlic, minced
  8. 1 ts sesame oil(this is optional)

Cooking Instructions:

  1. Wash the jellyfish strips 2 times with cold water and remove all the salt.
