Kale Salad with Bulgogi

….Last Saturday, I got some fresh kale from Steve’s garden. Oh! He is very sweet and thank you so much for thinking of me and bringing them for me. How pretty are the vegetables that have been grown well!! The bitter taste was a little stronger because of the freshness and the texture was crunchy. So I made a special little sweet dressing for this kale salad, and added sweet fruits and savory Bulgogi too. It’s enough for a meal with one bowl dish like this. Kale is a green, leafy vegetable that is rich in nutrients. It may offer a range of health benefits for the whole body. I am grateful to have gotten these ingredients and to be able to share our generosity with each other through food. Also I am happy today to be able to leave one of my stories in food. Servings: 4

Time: 40 minutes plus 30 minutes for marinating beef ribeye

Ingredients:

  1. 1/2 lb(250 g) beef ribeye, sliced thinly
  2. 1 tbsp garlic powder
  3. 1 tsp sesame oil
  4. 1 tbsp Mat-Gan-Jang
  5. 3–4 tbsp dried sweet rice powder
  6. 5 tbsp avocado oil
  7. black pepper to taste
  8. 1 golden kiwi, sliced
  9. 2 oranges, peeled and sliced
  10. 1/2 avocado, sliced
  11. 1 heirloom tomato, sliced
  12. 1 cup green lettuce
  13. 1 cup kale

For dressing:

  1. 3 tbsp mayonnaise
  2. 3 tbsp plain yogurt
  3. 3 tbsp fresh lemon juice
  4. 1/2 tbsp triple crunch mustard
  5. 1 tsp garlic powder
  6. 1 tbsp honey
  7. 1/2 tsp sea salt

….all mixed

Cooking Instructions:

  1. Remove blood from the meat with paper towels. Place the meat into a tray.

2. Marinate the meat, black pepper, garlic powder, Mat-Gan-Jang, and sesame oil into the tray well for 30 minutes. Set aside.

3. Meanwhile, mix the mayonnaise, plain yogurt, fresh lemon juice, mustard, garlic powder, honey, and sea salt into a bowl well. Store it in a refrigerator.

4. After 30 minutes, coat the marinated meat with the dried sweet rice powder well and place them into the tray.

5. Heat a pan with medium heat and add the avocado oil to pan-fry the meat until light brown. Place the meat onto a tray with paper towels(remove some oil).

6. Place the orange, golden kiwi, avocado, and tomato into a tray.

7. Place all ingredients onto a serving plate. Serve it with dressing sauce.
