Kimchi Pancake with Squid
…. Kimchi pancake is one of the easiest and quickest things to make and is one of Koreans’ all-time favorite dishes. Kimchi is available all the time for Koreans. It’s hot, a little spicy, crispy, sour, and a little salty. It’s not only a great snack but also it goes well with rice as a side dish. I usually add some pork in it, but ANNE didn’t like it. I try to add some squid instead of pork meat today. The result is great and a more special version of kimchi pancake for our family. JOHN said “Grab the corner of this pancake for me, please!”….. The corner of pancake is very crispy.

Time: 50 minutes
Ingredients:
- 2 cup Napa cabbage Kimchi, diced
- 1 cup onion, minced
- 2 jalapeños, minced
- 2 Ts green onion, minced
- 5 perilla leaves, cut into 1 inch
- 130 ml Kimchi liquid
- 1 cup squid, diced
- 1 cup flour
- 3 Ts potato starch
- 60 ml water
- 1 Ts sesame oil
- avocado oil to fry
Cooking Instructions:
- Mix the green onion, jalapeños, onion, squid, Napa cabbage kimchi, perilla leaves, potato starch, flour, water, kimchi liquid, and sesame oil into a big bowl well.
2. Heat a pan with medium heat and add avocado oil into the pan. Place the mixture in a pan with a spoonful capacity to fry them for 2 minutes both sides.
3. Repeat with the remaining mixture. Transfer to a plate and serve right away with a dipping sauce(this is optional).
