Korean Beef Skewers

….I made one of my father’s favorite Korean beef skewers. This recipe is my precious mother’s recipe. I remember how happy she was when she prepared my father’s favorite food. I felt very happy. Also when my mother invited guests at home, she made this dish often. At that time I used to make it pretty on the skewer as an assistant by her side. I think I was already interested in cooking from then on. My mother used flour batter instead of egg mixture. Dip each piece into the flour batter and pan fry them. This is a small tip! Anyway I liked eggs, so I didn’t seem to like it when I was young. But it soon became one of my favorite recipes from my mother. This dish doesn’t have the smell of egg and texture is chewy with flour batter. Have you ever tried this kind of dish?…. I strongly recommend this recipe to everyone. The flavors are rich and I guarantee you will get some compliments on it. Sharing it with my husband makes me think of my mother today.

Servings: 4–5

Time:1 hour

Ingredients:

  1. 1/2 lb(250 g) beef ribeye steak, cut into strips about 3 inches long and 1/2 inch wide
  2. 200 g(20–22 stems) green onion
  3. 10 skewers
  4. 3 Ts flour
  5. toasted sesame seeds for garnish
  6. sugar to taste
  7. shredded red pepper for garnish
  8. 1 Ts garlic, minced
  9. 2 Ts green onion, minced
  10. 1 Ts toasted sesame seeds
  11. 1 Ts sesame oil
  12. 2 Ts soy sauce
  13. 1 Ts muscovado
  14. black pepper to taste
  15. avocado oil to pan fry

For flour batter:

  1. 3/4 cup flour(all purpose)
  2. 1 cup water
  3. 1 Ts soy sauce

Cooking Instructions:

  1. Mix the garlic, green onion, toasted sesame seeds, sesame oil, soy sauce, muscovado, and black pepper into a bowl well.

2. Put the sliced beef into the bowl to marinate it and set aside for 30 minutes.

3. Heat a pot with medium high heat and add 4 cup water to boil.

4. After boiling, parboil the white part of green onion into the pot for 20 seconds(don’t parboil the green part). Set aside.

5. Fold each one and tie it with the green part. Set aside.

6. Put the marinated beef and green onion on a skewer.

7. Put the flour, water, and soy sauce into a bowl to mix well.

8. Sift the flour mixture with a strainer(it’s mostly lump free).

9. Coat the beef skewer with flour lightly.

10. Heat a pan with low heat and add some avocado oil into the pan. Dip the beef skewer into the flour mixture well and pan fry them until golden brown.

11. Place the beef skewer onto a tray. Sprinkle a pinch of sugar, shredded red pepper, and sesame seeds on top of the beef skewer.

12. Take out the skewer and serve it.
