Korean Spicy Raw Fish Soup(Mulhoe)

….My daughter ANNE wanted to eat Mulhoe, which made me think of a new recipe. It threw me off the moment I heard it, but I am used to trying out new recipes. ANNE always helps challenge myself. Frankly, this is the first time I made Mulhoe. I’ve never eaten Mulhoe….haha. Where did ANNE eat this? Is she curious about the taste? Even if it doesn’t taste the best, I hope ANNE is satisfied with this dish. First of all, I made a basic broth and added gochujang sauce to find the flavor. The soup should be freezing cold and the taste is supposed to be spicy, sour, and a little sweet. You can use more or less gochujang, sugar, or vinegar in this recipe, according to your taste. I made Mulhoe with top quality sashimi(hoe). It turned out great. I recommend you make it with noodles(set out small bowls for everyone and let them serve themselves). It will make a nice simple meal during summer. Enjoy the recipe!

Servings: 2–3

Time: 30 minutes plus 5 hours for soaking beef brisket with cold water and boiling with cold water(makes beef broth)

Ingredients:

  1. 1/2 cup cabbage, sliced thinly
  2. 1/2 cucumber, julienned
  3. 1/4 apple, julienned
  4. 6 perilla leaves , sliced
  5. radish sprouts for garnish
  6. 2 scallops, sliced thinly
  7. 5 Whelk meat, cut into small size
  8. 5 -7 pieces amber jack
  9. 5–7 pieces sea bass
  10. 5–7 pieces flatfish
  11. 3–5 pieces uni
  12. 1 tsp flying fish roe

For broth:

  1. 500 ml beef broth(mul-naengmyun)
  2. 2.2 tbsp gochujang
  3. 1.5 tbsp chili powder
  4. 2 tsp sugar
  5. 3 tbsp vinegar
  6. 2 tsp garlic, minced
  7. 1.5 tsp(or 1 tsp)mustard(tube)
  8. 4 tbsp apple juice
  9. 2 tbsp mixed fish sauce(gukganjang: tuna sauce: fish sauce= 1: 1: 1)
  10. 1 tsp gukganjang

….all mixed

Cooking Instructions:

  1. Mix the beef broth, apple juice, gochujang, chili powder, sugar, vinegar, garlic, mustard, mixed fish sauce, and gukganjang into a bowl well with a whisk.

2. Put the broth into a plastic bottle and store it in the freezer for 2 hours.

3. After 2 hours, make the cold mulhoe. Place the vegetables onto the serving bowl.

4. Put the raw fishes on top of the vegetables.

5. Take the broth out from the freezer and then pour the cold broth onto the bowl.

6. Serve it cold.
