Mongolian Beef & Bok Choy

This dish is of Chinese American cuisine and a very popular dish in America. It is a beef dish seasoned with a simple sauce, so there is little chance of failure. But I recommend you buy some good quality meat that is the soft part…ribeye steak, top sirloin. This is homemade Mongolian beef just the way you like it. If you want to make a darker color of this dish like a restaurant, you may add some Chinese dark soy sauce. It’s good to prepare the ingredients simply and stir-fry them quickly just before eating. My husband always asks a lot of questions of my dishes. “It tastes like eating at a Chinese restaurant! How did you make it?”…..My husband is completely ignorant of areas he is not interested in. I just laughed and explained kindly again. I used a Chinese sauce with this dish. There are sauces all over the world that go well with food. Cooking is easy and fun if you know how to use the sauce. If I don’t know something, I will keep learning.

Servings: 3–4

Time: 40 minutes

Ingredients:

  1. 400 g beef ribeye, sliced 3–4 mm thinly and one bite size
  2. 2 Ts flour or cake flour
  3. 1/4 ts salt
  4. black pepper to taste
  5. 5 stems green onion, cut into 1.5 inches
  6. 2 ts garlic, minced
  7. 1 Ts green onion, minced
  8. 1 ts ginger, minced
  9. 3–4 Ts avocado oil
  10. 5 chili pepper(or pepperoncini)
  11. 3 cup steamed rice

For sauce:

  1. 2 ts muscovado
  2. 2 ts oyster sauce
  3. 1 ts hoisin sauce
  4. 2 ts soy sauce(or 1 ts soy sauce+ 1 ts Chinese dark soy sauce(lao tou you))
  5. 2 ts sesame oil
  6. 5–6 Ts chicken broth

….all mixed

For garnish:

  1. 4 bok choy, cut into half lengthwise
  2. 1 stem korean green onion(only white part)
  3. 3 garlic cloves
  4. sea salt to taste
  5. 1/3 ts avocado oil
  6. 1 L water

Cooking Instructions:

  1. Put the sliced beef onto a tray and sprinkle the salt and pepper onto the beef. Set aside for 10 minutes.

2. Heat a pot with medium high heat and add the water, korean green onion, sea salt, garlic, and 1/3 ts avocado oil into the pot to boil them for 2–3 minutes.

3. Add the bok choy into the pot to parboil for 1–2 minutes(stem part first and then all together into the pot). Turn off the heat and sift the bok choy with a strainer. Set aside.

4 Mix the sauce ingredients into a bowl.

5. After 10 minutes, coat the beef with flour evenly.

6. Heat a pan with medium heat and add 3–4 Ts avocado oil onto the pan.

7. Grill the beef onto the pan until 70% cooked(do not cook completely).

8. Turn off the heat and transfer the meat onto a tray.

9. Heat the same pan with medium heat and add 1 Ts avocado oil, garlic, ginger, and 1 Ts green onion into the pan to stir them for 1 minute.

10. Heat down to low heat. Add the chili pepper and the mixed sauce into the pan to simmer them for 5 minutes.

11. Heat up the pan to medium heat and put the cooked beef into the pan to stir fry.

12. Add the green onion into the pan to stir them quickly and turn off the heat.

13. Serve it with garnish and a bowl of rice.
