My Hand Rolls
….I had hand rolls for dinner, and this doesn’t need a specific recipe. It was refreshing and delicious. It’s one of my family’s favorites and we made it together. I am always feeling so blessed to see everyone eating the food I prepared. I make this dish, hoping this dish will accommodate the main dish nicely. Although the ingredients are simple, you can enjoy the taste by changing the ingredients up to one’s taste. Among the selection of ingredients, the selection of seaweed is important. When you choose a seaweed, it’s not good to get the seaweed that’s too thin. Also it’s better to get some crispy seaweed. Even a small difference can have a big impact on the taste. Talking about the whole family, my hands get busy. All of a sudden, the plate was empty.

Ingredients:
- 1 lb beef short ribs, julienned
- 10 pieces dried seaweed, cut into quarters
- 5 cups steamed rice
- 2 cucumbers, julienned
- 10 pieces seafood sticks, julienned
- 6 eggs
- 1 tsp Mirin
- sea salt to taste
- 2 avocado, sliced
- 2 tbsp avocado oil
- 1 tsp sesame oil
For beef short ribs marinating:
- 1 lb beef short ribs, julienned
- 2 tbsp soy sauce
- 1 tbsp muscovado
- 1 tbsp garlic, minced
- 2 tbsp green onion, minced
- 2 tsp toasted sesame seeds
- 2 tsp sesame oil
- black pepper to taste
- 1 tbsp plum extract
- 1 tbsp Mirin
For rice sauce:
- 1 cup vinegar
- 5 tbsp sugar
- 2 tsp sea salt
- 5*5 kelp
Cooking Instructions:
- Put the beef into a bowl.
2. Put the soy sauce, muscovado, garlic, green onion, sesame seeds, sesame oil, black pepper, plum extract, and Mirin into a bowl to mix well. Set aside.
3. Beat the egg with a little salt and Mirin into a bowl.
4. Heat a pan with low heat and some oil and pour the beaten egg into the pan to spread thinly.
5. Turn off the heat and let it cook on the hot pan for 1 minute. Flip it over and let it sit on the pan for 1 more minute.
6. Transfer it to a tray and cool down. Slice it into thin strips and set aside.
7. Place the cucumber, seafood sticks, avocado, and egg strips onto a tray.
8. Make a rice sauce: put the vinegar, sugar, sea salt, and kelp into a sauce pot. Heat the sauce pot with medium heat to boil until the sugar is melted and turn off the heat. Set aside with a lid on until it cools down. Take out the kelp and keep in the refrigerator up to 3 months.
9. Put the steamed rice into a bowl and sprinkle the rice sauce evenly over warm rice. Fold gently with a wooden spoon to mix(1 cup steamed rice + 1 1/3 tbsp rice sauce). Set aside for cooling at room temperature.
10. Heat a pan with medium high heat and add 1 tsp sesame oil into the pan.
11. Stir fry the marinated beef until the moisture is gone.
12. Serve it all together with soy sauce and wasabi.
