….An omelette is a dish made from beaten eggs, fried with butter or oil in a frying pan for breakfast. It is quite common for an omelette to be folded in with fillings such as mushroom, vegetables, and cheese. I made this dish with fried egg and vegetables. A well-made omelette is the mark of a good cook. If you haven’t mastered this simple dish, it’s time to get cracking. My very first time I learned to cook at home was making an omelette 30 years ago, and it just about gave me a panic attack. It looks easy, but it was difficult to properly roll up the omelette. Though an omelette is simple and made with just a few ingredients, it can be difficult to master. My first choice ingredient was tomatoes. Tomatoes can be used in a number of different ways. I tried different ways to make omelettes with tomatoes. Bake tomatoes! The result was good, more delicious than I thought. It was a great combination with an egg omelette. Another tip — I think it will go great on top of a baguette.

Servings: 2–3

Time: 40 minutes plus for marinating tomatoes for 6 hours

Ingredients:

For egg omelette:

  1. 6 eggs
  2. 4 1/2 tbsp milk
  3. 1/4 tsp sea salt
  4. 3/4 tsp sugar
  5. 1 tsp unsalted butter
  6. 1 tbsp avocado oil
  7. some mixed green to taste
  8. 1 tbsp olive oil
  9. sea salt to taste(for green mixed)

For marinate tomatoes:

  1. 3 cups tomatoes(red, yellow), peeled skin
  2. 1 tbsp balsamic vinegar
  3. 2 tbsp muscovado
  4. 2–3 basil leaves, sliced
  5. 1 1/2 tbsp olive oil

For pink sauce:(spice sauce, this is optional)

  1. 3/4 cup light sour cream
  2. 2–3 tbsp sriracha

….all mixed

Cooking Instructions:

  1. Heat a pot with medium high heat and 4 cup water into the pot to boil. Cut crosswise very thinly with a knife on the top of the tomatoes.

2. Put the tomatoes into a bowl and pour the boiled water into the tomatoes for 1–2 minutes.

3. After 1–2 minutes, you can see the tomatoes starting to peel. Now, peel the tomatoes.

4. Add the balsamic vinegar, muscovado, basil leaves, and olive oil into the tray to mix gently. Keep it in a refrigerator for 6 hours.

5. Meanwhile, put the light sour cream and sriracha into a bowl to mix well. Set aside(this is optional).

6. After 6 hours, preheat the oven to 356 F. Pour the marinated tomatoes onto a baking tray(include the liquid).

7. Cook in a preheated oven about 35–40 minutes.

8. After 35 minutes, turn off the heat and remove the tray onto a counter.

9. Put the egg, milk, sea salt, and sugar into a bowl. Mix them well.

10. Heat up a pan with low medium heat and add the butter and avocado oil into the pan.

11. Pour the egg mixture into the pan and stir them slowly with a wooden spoon until cooked 80% of the egg mixture.

12. Roll up the egg mixture both sides and flip it over. Let it sit on the pan for 1 minute.

13. Put some mixed green into a bowl and sprinkle the olive oil and sea salt into the bowl to mix it lightly. Add the baked tomatoes into the bowl and mix them lightly.

14. Put the mixed green and tomatoes onto a serving plate.

15. Put the omelette on top of the tomatoes. Sprinkle the pink sauce on top of the omelette(this is optional).

16. Serve it.
