Pan- Fried Dried Squid

…..This dish reminds me of my childhood memories! My mother used to make delicious pan-fried dried squid often when I was young. My mother soaked about 20 dried squid every time she made this with cold water for few hours. After scoring each piece lightly with a knife, they were lightly seasoned. Finally, they are pan-fried with egg mixture. I vividly remember how many hours she used to cook. How delicious it was, that’s why I sometimes make it for my family. My mother’s hometown was Jeonju which has a famous dish called “pan-fried dried squid”. Today, I soaked some dried squid in cold water for few hours. My daughters like this dish like me. It is so great that the taste of my mother’s dish is remembered by my daughters. It’s not a great recipe, but I hope my daughters remember this dish. It’s a warm evening that reminds me of my mother…..

Servings: 4

Time: 40 minutes, plus 3–4 hours to soak the dried squid in cold water and marinate it with the sauce

Ingredients:

  1. 2–3 dried squid (230 g), cleaned and patted dry
  2. 1 tbsp green onion, minced
  3. 1 tsp garlic, minced
  4. 1 tbsp water
  5. 1/2 tbsp soy sauce (or mat-gan-jang)
  6. 3 tsp Mirin
  7. 1/3 tsp muscovado sugar (If you used mat-gan-jang, you don’t need to add it.)
  8. 1/3 tsp toasted sesame seeds
  9. 1/3 tsp sesame oil
  10. 3 tbsp flour
  11. 3 eggs
  12. avocado oil to pan-fry
  13. salt to taste

Cooking Instruction:

  1. Remove the skin from the dried squid, then soak it in cold water for 2 to 3 hours.

2. After 2–3 hours, clean and pat dry the squid. Lightly score both sides of the squid. Set aside.

3. Combine the green onion, garlic, water, soy sauce, mirin, muscovado sugar, sesame seeds, and sesame oil in a bowl and mix well.

4. Marinate the squid with the mixed sauce. Set aside them for one hour in a refrigerator.

5. After one hour, coat the marinated squid with flour on a tray.

6. Beat the eggs in a bowl and add a pinch of salt.

7. Heat a pan with medium-low heat and add some avocado oil. Tilt the pan to spread it around. Dip each piece in the beaten egg and place in the pan one by one.

8. Place them on a tray and serve with some soy sauce (soy sauce to vinegar ratio: 2:1).
