Pan-Fried Eggplant with Almond flour

….The simplicity of this eggplant dish is attractive. This dish which I tasted by chance was delicious to everyone’s taste. It tasted mild and not greasy. I never thought to use almond flour instead of flour with this dish. This tip in the recipe is the best. Everyone gave a thumbs up for the flavor. We gobbled it up. Many recipes are good to replace with good ingredients to think about health. Even more this recipe is simple and easy. Thanks for sharing this recipe — I learned from JUDY Park.

Servings: 4

Time: 20 minutes

Ingredients:

  1. 4 Italian eggplant, sliced into half lengthwise
  2. 1/2 cup almond flour
  3. salt to taste
  4. black pepper to taste
  5. avocado oil to pan-fry
  6. Parmesan cheese to taste

Cooking Instructions:

  1. Score each eggplant pieces lightly.

2. Spread some salt and pepper onto the both sides of the eggplant. Set aside 10–15 minutes.

3. Coat both sides of the eggplant with almond flour.

4. Heat a pan with medium low heat and add some avocado oil and eggplant into the pan to fry them until golden brown. Transfer the eggplant into the tray.

5. Serve it with Parmesan cheese on one side.
