Persimmon and Korean Pear Salad with Lemon Dressing
….In the backyards of many homes in California, orange and persimmon trees are abundant. These vibrant, orange-hued fruits, hanging in profusion, are gifts meant to be shared. Every autumn, my second son-in-law’s family sends us several boxes of persimmons harvested from their backyard. I am always grateful for this generosity. Steve, my second son-in-law, picks the fruit, and my daughter, along with her mother-in-law, carefully cleans and beautifully packs them into boxes before delivering them to us. Thank you so much!
Persimmons are one of my favorite fruits — crispy and sweet, they never fail to delight me, no matter how many I eat. Today, I decided to use persimmons alongside crisp pears to create a simple, fresh salad. I dressed it lightly with lemon salt, and olive oil, and added slightly bitter arugula greens for balance, which turned out to be a wonderful combination.
To complement the persimmons, I included walnuts and some nuts from a granola I made a few days ago, along with Brie cheese for protein. Though simple, I took care to stack the ingredients beautifully on the plate, adding an extra touch of joy and fun to the meal.

Servings; 4
Time: 30 minutes
Ingredients:
- 3 persimmons, peeled and cut into small pieces
- 1/2 Korean pear, peeled and cut into small pieces
- 100 g arugula
- 120 g Brie cheese, cut into small pieces
- granola to taste
For Lemon Dressing:
- 4 tbsp fresh lemon juice (from 2 lemons)
- 2 tbsp honey
- 1 tsp lemon salt
- white pepper to taste
- 4 tbsp olive oil
Cooking Instruments:
- Combine the lemon juice, honey, lemon salt, white pepper, and olive oil in a bowl, then mix well. Refrigerate until ready to use.
2. Arrange the arugula on a serving plate.
3. Add the persimmons and Korean pear on top of the arugula.
4. Add the Brie cheese on top of the arugula.
5. Sprinkle a bit of granola and dressing over the salad.
6. Serve it.
