Pie Pizza
….I took out some pie dough from the freezer and made a pie pizza that my husband likes. On the crispy pie dough, you can add fresh vegetables, basil pesto, and ricotta cheese as the base, then top it with whatever you like to create your own unique pizza. While it doesn’t have the chewy texture of traditional dough, the crispy and slightly sweet pie dough is also appealing.
Today, I put prosciutto, ricotta cheese, figs, and balsamic cream on one side for my husband, and for myself, I added sweet mango, grapes, the sweet and tiny tomatoes I bought yesterday, grated Parmesan cheese, and a bit of plum jam I made last time. I mixed and added whatever vegetables I had, making it hearty and visually pleasing. My husband, as expected, commented that the prosciutto side was delicious and added, “The pie dough is so good,” confirming his preference. He said it was like a salad pizza, light and not heavy, and thanked me.
What a surprise! Compliments have been rare lately… Maybe he was in a good mood today. It was a day to be grateful for having someone to share even the small things with.

Ingredients:
- 400 g puff pastry, thaw the pie dough
- 200 g ricotta cheese
- 3 tbsp basil pesto
- 150–200 g mixed green
- 100 g mango, thinly sliced
- fig to taste, cut into quarters
- 4 slices of prosciutto
- grape to taste, cut in half
- cherry tomatoes to taste
- plum jam to taste
- balsamic cream to taste
- Parmesan cheese to taste
Cooking Instructions:
- Spread the puff pastry out on a baking tray.
2. Preheat the oven to 400°F. Cook for about 15–17 minutes in the preheated oven until crispy.
3. Turn off the oven and place the puff pastry on the counter to cool.
4. Meanwhile, mix 120–150 g of ricotta cheese with basil pesto in a bowl until well combined.
5. After allowing it to cool slightly, cut the puff pastry into 8 pieces using a pizza cutter.
6. Place the cooked puff pastry on a serving board. Spread the ricotta cheese and basil pesto mixture evenly over the puff pastry.
7. Add some mixed greens on top of the ricotta cheese and basil pesto mixture.
8. Place mango, fig, prosciutto, tomatoes, grapes, ricotta cheese, balsamic cream, and parmesan cheese on top of the greens.
9. Serve it.
