Pot Rice with Seafood

….This is my first time making pot rice with seafood. I will introduce you to a one pot meal. It’s a healthy and delicious rice bowl with lots of seafood. Even though the pot rice is mixed before eating, each ingredient brings out their unique flavors, textures, and colors. They come together beautifully in the bowl and deliciously in your mouth.

Servings: 2

Time: 30 minutes

Ingredients:

  1. 1 2/3 cup white rice, cleaned
  2. 1 1/4 cup anchovy broth
  3. 2 ts sesame oil
  4. 1 ts soy sauce
  5. 1/2 cup boiled octopus, sliced
  6. 5 -6 scallops
  7. 12 shrimp, cut into small pieces
  8. 15 whelk meat, sliced

9. 1 jalapeño, minced

10. 1 red pepper, minced

11. 3 stems green onion, minced

12. 6 shiitake mushrooms, sliced

13. 3 ts Mirin

For sauce:

  1. 1 Ts soy sauce
  2. 1 Ts sugar
  3. 1 Ts chili pepper
  4. 1 Ts sesame oil
  5. 2 Ts water
  6. 1 Ts sesame seeds

…….all mixed

Cooking Instructions:

  1. Mix the shrimp, scallops, and whelk meat each in 1 ts of Mirin separately. Set aside.

2. Heat a pan with medium heat and add 1 ts sesame oil and octopus to stir fry them lightly. Turn off the heat and set aside.

3. Heat a pot with medium heat and add the rice, 1 ts sesame oil to stir fry for 1 minute. Add the soy sauce into the pot and stir for 30 more seconds.

2. Add the whelk meat into the pot and stir for 1 minute.

3. Pour the anchovy broth and shiitake mushrooms into the pot to boil them for 8 minutes with a lid.

4. Heat down to low heat into the pot and boil for 7 minutes. After 7 minutes, put the shrimp, scallops, and octopus into the pot. Boil for 7 minutes.

5. Turn off the heat, put the lid on, and let it rest for 5 minutes.

6. Sprinkle the jalapeño, red pepper, and green onion on top of the pot rice.

7. Serve with sauce and mix the pot rice softly.
