Potato Salad with Mini Burger

….It’s a pretty simple dish to make, but it’s a great combination of crunchy cucumbers and apples with soft mashed potatoes. Whenever I make potato salad I always make a potato salad burger too. I used dinner rolls and spread over some tomato jam, crispy romaine lettuce and potato salad on the dinner rolls. It makes a quick, easy, and filling snack or lunch.

Servings: 4

Time: 40 minutes

Ingredients:

  1. 1 lb potatoes, peeled and diced
  2. 3 eggs, boiled
  3. 1 cup cucumbers, sliced
  4. 3/4 cup onion, sliced
  5. 1 ts sea salt
  6. 1 opal apple, minced
  7. 4 Ts mayonnaise
  8. 1 Ts KOZLIK’S triple crunch mustard
  9. 1 1/2 ts sea salt
  10. black pepper to taste
  11. 8 Brioche dinner rolls
  12. tomato jam to taste
  13. 4 leaves Romaine lettuce

Cooking Instructions:

  1. Heat a pot with medium high heat and add 4 cup water, 1/2 ts sea salt, and potatoes into the pot to boil them for 20 minutes. Sift the potatoes.

2. Meanwhile, salt the cucumbers, onions, and 1/2 ts sea salt into a bowl for 20 minutes.

3. After 20 minutes, squeeze out the liquid with cheese cloth. Set a side.

4. Soak the apples into sugar water(1 cup water+1 ts sugar) for 5 minutes. Sift the apples(it protects against changing colors).

5. Mash the boiled potatoes and eggs in a bowl with a potato pusher.

6. Add the cucumbers, onion, mayonnaise, triple crunch mustard, 1 1/2 sea salt, and black pepper to mix them well softly.

7. Cut a dinner roll into half and spread some tomato jam.

8. Put a romaine lettuce and plenty of potato salad on the dinner roll.

9. Serve it with a cup of milk or a cup of coffee.
