Prawn Bisque Pasta

….What is a bisque? Traditionally, bisque refers to a thick and creamy soup made with shellfish. The shellfish shells are cooked slowly with vegetables, which release juices and a taste that give the bisque its unique strong seafood taste. Try making this pasta dish at home, as it’s a a delicious prawn bisque pasta dinner. I am sure that you will definitely love this easy prawn pasta soaked in loads of that gooey creamy homemade bisque sauce. It is very simple to prepare and so delicious. Those prawn heads contain loads of flavor so why would we get rid of them in the end? So here is why I never throw away prawn heads, because you will be surprised how much flavor and juice there is still left in those heads. This recipe is from @sseong_nh. This recipe has some prosciutto chips on top of the pasta for garnish. I think it’s a brilliant idea. The crunchy and salty taste was so harmonious. Thank you so much as I learned new great idea(prosciutto chip) from this recipe.

Time: 50 minutes

Ingredients:

  1. 15 fresh prawns, peeled and deveined, saved heads and shells
  2. 250 g black squid ink pasta
  3. 1/2 cup white wine
  4. 1 cup onion, chopped
  5. 1/4–1/3 cup heavy cream
  6. 2/3 cup celery, peeled and chopped
  7. 2/3 cup carrot, chopped
  8. 1 tbsp garlic, minced
  9. 1–2 tsp sea salt
  10. black pepper to taste
  11. 3 tbsp olive oil
  12. 1 tbsp tomato paste
  13. 10 pieces prosciuttos
  14. chervil for garnish
  15. smoked paprika powder to taste
  16. dried tomato to taste, sliced
  17. 2 cups water + 1000 ml water

Cooking Instructions:

  1. Peel and devein with the shrimp and separate shrimp, heads, and shells onto a tray.

2. Put the shrimp onto a tray and add some garlic powder, sea salt, olive oil, and smoked paprika powder onto the shrimp to mix well. Set aside.

2. Heat a pan with medium heat and add some olive oil, shrimp heads, and shell into the pan to stir fry them for 5 minutes. Add the white wine into the pan and boil enough alcohol to fly away(flambé for 3 minutes).

3. Add the onion, carrots, celery, and garlic into the pan to stir them until cooked.

4. Add the water and tomato paste into the pan to boil. Start boiling, heat down to medium low heat to simmer them for 10 -15 minutes with a lid.

5. Add the sea salt into the pan. Turn off the heat and set aside to cool down.

6. After cooling down, blend the shrimp sauce with a blender. Shift the shrimp sauce with a strainer(remove shrimp shells).

7. Heat a pot with medium heat and pour the sauce into the pot.

8. Add the heavy cream into the pot(adjust concentration) to boil. Set aside.

9. Heat a pot with medium high heat and 2 L water and 1 tbsp sea salt into the pot to boil.

10. Add the pasta into the pot to boil them for 7 minutes until al dente(save 1 cup the water of the boiled pasta). Sift the pasta with a strainer.

11. Meanwhile, place the prosciuttos onto a baking tray and put into broiler with low heat for 3–5 minutes until crisply cooked.

12. Heat a pan with medium low heat and add some olive oil and boiled pasta into the pan to stir fry them for 1 minute.

12. Heat a pan with medium heat and add some olive oil and marinated shrimp to cook well. Set aside.

13. Serve it all together. Place the noodles onto a serving plate.

14. Put some shrimp, dried tomato, prosciutto chips, chervil, and some flowers on top of the noodles.

15. Pour the bisque sauce into the middle.

16. Serve it.
