Prawn Mango Avocado Salad with Lime Dressing
….I happened to come across the most lovely and perfectly ripe Haden mangos recently from @sigonasfarmersmarket “They’re tree-ripened”. My husband wanted to keep eating mangos…haha. And while I know there are a lot of ways to enjoy mangos, this mango salad is my favorite. I’ve been making this salad for a long time and it never disappoints. For this salad, fresh cubed mango combine with prawn, avocado, arugula and orzo with lime dressing. The dressing is bright and fresh with lots of lime juice. Mango salad makes a great salad on its own. You can fully taste the taste of each ingredient, because the lime dressing is very light. If you want it to taste more sour, you can add more lime juice in it. Well my husband took some leftover mango salad in the lunch box today. I guess he wanted to eat a lot with mangos. Being able to eat whatever you want when you want is a small happiness…..This recipe is from @recipe_tin.

Ingredients:
- 1 cup orzo
- 300 g prawns, 600 g unpeeled cooked and peeled(I mixed white prawns and black prawns)
- 1 large mango, diced into 1/2" pieces
- 1 large ripe avocado, diced into 1/2" pieces
- 70 g arugula, chopped
- 250 g cherry tomatoes, cut into half
- 1/2 red onion, sliced thinly
- 1/4 cup cilantro leaves(or parsley, chives)
For lime dressing:
- 4 Ts extra virgin olive oil
- 2 Ts fresh lime juice(plus more to taste)
- 1/2 ts sea salt
- 1/4 ts black pepper
- 1 garlic, minced
Cooking Instructions:
- Put the extra virgin olive oil, fresh lime juice, sea salt, black pepper, and garlic into a jar.
2. Shake dressing in jar and keep in a refrigerator.
3. Heat a pot with medium heat and add 4 cup water and the prawn into the pot to boil until cooked(it is soft and delicious when you put the prawn together in cold water).
4. Sift the prawn with a strainer and cool down. Peel the prawn and cut into 2/3" pieces. Set aside.
5. Heat a pot with medium high heat and add 5 cup water into the pot to boil.
6. Put the orzo into the pot to boil them for 10–11 minutes.
7. Sift the cooked orzo with a strainer and cool down.
8. Place all salad ingredients in a bowl and pour over the dressing.
9. Toss very gently and adjust to taste with more lime if desired.
10. Serve immediately.
